You might find you get worse shifting performance after installing these on STI shifters, particularly the ones with hidden cables.

Depends on what cables that were previously fitted. If they are the better optislick or polymer coated Dura Ace ones, they have less friction compared to these. The difference is small but some people notice it.
is 2100mm generally for rear shifter?
Yes but they can easily be trimmed back for use on front derailleur.

Sorry easy if you have inner cable cutters! Wouldn't try snipping without them, that will only end in pain.
