What's Your Go to Home Cooked Meal

Hey OzB peeps

Interested if anyone would like to share their go to meal that goes on rotation. And I mean home cooked (reheated doesn't count all you sticklers) dish.

From learning about others I'm hoping to get some new ideas. Something that reheats ok for multiple meals is always what I consider.

My go to tends to be a pea n ham soup, pasta with a red sauce, curry n rice w side lentils, burgers and fries or salad.

Just interested in seeing what others do.

    I don't frequently cook but once in a blue moon, when really get the urge, then default is almost always lasagna. Absolutely love the stuff.

    The only exception is occasionally will do a chilli con carne in the pressure cooker accompanied with Old El Paso rice kit.

    • Like the idea of the chilli in the pressure cooker. Gosh haven't made lasagna in ages, might have to change that myself.

    Casserole. Essentially Mulligan/Irish Stew. Anything in that category lasts, can be stretched and frozen.

    • Good idea as I'd imagine would work with mashed potato or pasta. Do you have your own recipe?

      • Yeah as I gave up on commercial sauces.

        • meat (osso bucco, gravy, chuck etc)
        • vegetables (frozen will mush but sometimes who cares)
        • tin of diced tomatoes
        • tin of water
        • Spices to taste (usually pepper, paprika, oregano, basil (dried)
        • sauces to thicken - tomato, HP whatever
        • Worcestershire sauce. I like a lot.

        Stew = 1 tin water Casserole = 3 😁

        We often have just bowls of it but absolutely can go with rice, pasta etc. Usually we have potatoe in it so try not to double down on carbs

    Indomie with fry egg.

    Ramen with boiled egg.

    • Eggs with everything are delish. Especially leftover fried rice n soy. Have you tried boiled egg with packed sumin type noodles tho? It somehow works so very well too.

    Risotto… stock, leeks, onions, roast pumpkin, mushrooms, tomatoes and Parmesan + optional chicken.

    Often made a day after a supermarket roast chicken meal, so I make the stock from the picked chicken bones and a few veggies, and the actual left-over chicken meat becomes the optional chicken in the risotto.

    • Love the way you think about how it'll all get used to maximize everything. Wish partner liked risotto.

      Yum! me too, i fall asleep thinking of what I'm going to cook through the week ( then i end up getting tired and batch cooking instead).
      Share more on the pies and curried rice? I make curry fish pies in my piemaker currently, would be interested re your 4 ingredient pies.

        The chicken pies are super easy:

        • 1 x chicken breast, cut into very small chunks
        • 1 x tin of asparagus, drained well (spears and tips, or just spears, chopped up)
        • 1 x pack ofcheese sauce mix (dry - don't mix it with water!)
        • 2 x sheets of puff pastry

        Preheat oven to 200°C fan forced
        Defrost pastry, and cut each sheet into 4 squares to make 8.
        Fold and push squares into 8 holes of a 12-hole muffin tray (or your pie maker). You can lightly spray the muffin tray with oil, or use silicone patty cases like I do.
        In a bowl, mix chicken, asparagus and dry cheese sauce. Spoon into the pastry cases, and fold over the tops to seal.
        Brush with milk or water, sprinkle with sesame seeds (optional).
        Bake for 15-20 mins. Once the tops are golden brown and crispy, they're done.
        We have them with chips and tomato sauce - because we're classy! :P
        It makes 8, so depending on how many you're feeding, there should be leftovers. To reheat, you can microwave in 20 sec bursts until warmed through, and then bake in a hot oven briefly until crisp on the outside.

        The coconut curry sausage rice is made at least once a fortnight in our house:

        • 1 x pouch of Lee Kum Kee coconut vegetable sauce
        • 3 or 4 sausages
        • 1/2 a bag of frozen cauliflower
        • 1 1/2 cups of cooked rice, or 1 x pack of microwave white rice
        • 1 x 165ml tin of coconut milk

        Preheat oven to 200°C fan forced.
        Microwave cauliflower until tender, then chop up any large pieces.
        Spread on a lined baking tray, and lay sausages on top.
        Bake for 15-20 mins, or until sausages are cooked through, and cauliflower is lightly browned on top.
        Slice the sausages, and add to a large pan. Add cauliflower, rice, curry sauce pouch, and coconut milk.
        Stir over medium heat until thickened.
        Serves 2 or 3.

        You can swap the cauliflower for any other vegetables, like frozen peas or cooked, sliced carrots. You just add them to the pan at the end, rather than roasting with the sausages. I've also made this with shredded chicken instead of sausages, and it's good, too.

        • Ha! Love the cheese sauce idea with the asparagus. Normally i make a cheese sauce but this is even quicker. Ok, buying the coconut veggie sauce coz that'll be delish with rice. Is jasmine or basmati best? I'm thinking cauli, cabbage and carrots for myself. Thankyou thankyou

          • @cookie2: You're very welcome! I have loads more in my repertoire. ;)

            I use either basmati or jasmine, they're both good! I tend to make it so that it's more "dry" like a jambalaya/paella type dish, rather than a saucy curry, if that makes sense? You can make it without mixing in the rice (you'd want to add more coconut milk), and just serve it over rice. I meant to say that roasted pumpkin is also awesome with this.

            • @ChocStrawberries: Pumpkin works for me, as does mixing it in with the rice. Thanks heaps! Sometimes a few new ideas are needed, especially when I saw iceberg lettuce at $9.98 each at my fruit n veg store this arvo!

    Korean BBQ pork belly. Favourite chillout meal. Must come with Soju.

    I've been getting into Korean food, so have bought kimchi, gochujang, gochugaru and doenjang (can find in the Asian shops). Can easily whip up Korean pancakes, and recently made kimchi stew for the first time, it was really easy and tasty. The stew reheated really well and when I had one serve left I just threw it back on the stove, added an instant noodle and egg.

    Also, if you have eggs and bacon, you have carbonara. Just whisk the eggs with some cheese and pepper, fry the bacon and mix in after draining the pasta

    • I love creamy pastas but they don't reheat the same so I prefer red sauces for batch cooking. Haven't done Korean pancakes but make okonomiyaki occasionally and they're a good dish for multiple meals and for using up lots of cabbage!

    A stroganoff with rice is really good. Using sausage as the meat works really well. I use those stroganoff flavour packets from Aldi, and it turns out really nicely.

    Can easily be a one pot meal, throw in some veg as well and you're good to go. The sauce is amazing with rice.

    • Love a good stroganoff but I never have the sour cream at home. Good idea on the packet flavouring, I'll check out at the shops. I did try a fresh (refrigerated) coles brand stroganoff sauce the other day at it made heaos and was pretty good. Just needed extra paprika added but made 4-5 meals with a side carb

    Jamie Oliver one i seen years ago.

    FRY pan, cut up some sausages, throw in some peas, tomato, basically anything you want.

    COOK

    Crack some eggs into it

    and then chuck it under the grill to finish.

    • Like baked eggs but anything goes.

    That’s about all I normally make. Good for meal prep because it’s easy to make a big batch of these things.

    My every meal is a home-cooked and fresh meal.

    My favourite is lamb loin chops curry with a lot of spices and rice.

    Butter onto the pan. Onions, ginger-garlic, turmeric, Garam masala(Cinnamon, Cloves, Green cardamon, Black cardamon, Star anise, Mace) powder, Jeera powder, coriander powder. After a while put cut lamb loin chops and turn them off after 15-20 minutes just stirring every 5 minutes in between. Eat with rice.

      • What sauce? Authentic curries don't use sauce.

        • I mean the wet part. That’s a lot of dry(ish) ingredients. Do you add coconut milk or water?

          • @djsweet: No, every meat contains water in it. And lamb meat is so tender, you don't have to cook it for too long like chicken. If you want you can add 1-2 tomato

    • Me too but on busy weeks I lean towards foods that reheat better. Curry sounds delish!

    Tastes better as it gets old, its weird. Ive modernized it using a Phillips slow cooker.

    • Haha looks hearty and comforting tho. Some of the dankest food, tastes the best!

      • Ancient hunters stew for cold climate. Also used to preserve food in days before fridges. I leave mine for over a week out and it gets better over time.

        Every region and family have their own version.

    I have a few go to's for wintertime. Any type of curry or casserole but I really like the following 2 for when it's really cold.

    Devilled sausages and mashed potato/veg. I just use the packet sauce.

    Pesto beef mince, again with potato mash. I just use Coles or Aldi Pesto mix. Either the tomato or the basil, 500g beef Mince, 1 large diced onion, some halved olives and a tin of crushed tomatoes.

    For the mash, I use 4 large potatoes diced, about a cup each of frozen peas and diced carrot and about half a diced onion. I cook it with some Vegeta vegetable stock powder. when cooked, drain, add a small amount of marg/butter and roughly mash.

    Easy and filling.
