    Teflon avoid. Just get a real high carbon steel wok and season it with natural oil.

        Been cooking exclusively with a carbon steel wok for 3-4+ years now and stopped using seed oils years ago.
        Only use olive oil and animal fats. No issues with keeping seasoning. Can cook eggs without oil if I want.
        Use a gas stove as well as an outdoor commercial wok burner.

        TL:DR. any oil or fat will work fine. (don't worry what Kenji says)

        I would disagree.
        Suet! It has much larger particles that fill the cavities in steel better. Seed and nut oils don't season as well as need to be reapplied much more frequently. Thought this is from experience with cast iron.

        Chemical coating (design and patent owned by a big company which is known for lobbying the government) vs natural?

        If you were to use the wok the way woks are intending the covering will be gone before you even cook it after the first wash. Also its not high carbon steel so it will not retain high well and not have a good continue heat for cooking.

        It does break down and become ingested over time, however the validity of associated health concerns seems contentious at best.

        I've had great results (and longevity/value) with a well-seasoned iron wok. Plenty of online how-tos.

      • I was reading many articles on it but Don't misunderstand me, but I'd like to recommend that you watch the movie Dark Waters. It was a real eye-opener for me, and after watching it, we stopped using any Teflon products.

        Teflon on normal pots and pans is fine, it's just that woks are designed for very high heat cooking, and that tends to destroy the coating. Once the Teflon's gone, the thing is useless and whatever treatment they gave the steel to make it rough enough for the Teflon to stick to it makes it pretty rough to cook on; and there's no way to fix it.

    • Best cooking advice I ever followed. Bought the cheapest iron wok I could find - seasoned it per the tutuorials (youtube etc). Has served me beautifully for a decade with amazing stir fries.

    If you're high heat cooking you don't want Teflon. If you're not high heat cooking you don't want a wok. Pointless product.

      Cheaper. Equally a problem with Teflon.
      Just go to your local Asian store and get a cheap steel wok.

    Woks are meant to be hot. Teflon/non stick does not like high heat. What's the point?

    I hate non-stick crap. It peels off in no time and you start eating it.

    Season any frypan (cast iron) or wok and it's also non-stick and not ingesting crap.
