good book BUT Warning this book is more about the cook and restaurant. There not many recipes…

if you want a book full of tips instructions and recipes, cant go past Project Smoke by Steven Raichlen

  • was in Austin a few years ago, despite jumping in the line early it was still going to be like a 4 hour wait and gave up! luckily there's good bbq all over texas

    • I think I waited 2-3hrs, and the wait the next day at LA BBQ food truck (competitor) was less than an hour. I'd say both of those are equal (there's a reason) and easily the best briskets I've ever had.

      • Odd question maybe, but could you give Franklin’s a rating out of 10? 13/10? Life changing/10? Or just like, a solid 9/10?

        • It's 10/10 (same as LA BBQ was/is?), my best brisket I ever cooked was an 8, most of mine were 6 or worse, and I think the best I've had elsewhere, was an 8.5. I've eaten and cooked lots of brisket. Sorry environment.

          • @TEER3X: Thanks for that. Always trying to get an idea of what it’s actually like, even though I’ve watched loads of videos about him.

i think the reason is because people that work at Franklin then open other shops and make sure they publicise that "i'm ex-Frankie".

and i agree the brisket in general in austin is phenomenal. i'm glad i found another place that only had a short wait.

  • agree with what others said the book is good but it's not really a how to & loads of recipes, best watching some of his youtube videos or googling his recipes if you want something specific
