Yes, they sell Liquorland gift cards and Coles Group & Myer gift cards, but it will depend on whether stock is available at a particular location. (The gift cards are usually located at the checkout.)
In other words, if you go to a Liquorland location and there are no Coles Group & Myer gift cards, it’s because they have not replenished stock (rather than the location not selling Coles Group & Myer gift cards at all).

I was declined to use Amex to buy a gift card today. I was served by a elderly lady, she told me I cannot use Amex card to purchase a gift card because there are a lot of frauds with Amex. She further said she was told by HQ.
Avoid to be served by an elderly lady next time.
I bought 2 x $500 CM GC at Liquorland today…I went when it was quiet and I was the only one in the shop….the chap allowed me to pay for the GCs in $100 increments so I manged to use all 10 of my Amex cards…mainly stored in Google Wallet.

I was quite surprised with how fast it was for this deal, especially since the AMEX email I received after making the purchase said the cashback would be credited within 15 business days (rather than the usual 5 business days).

Went to Liquorland to buy the Coles Myer gift cards.
Had to show ID. They checked the name on the credit card matched the name on ID. Apparently to prevent fraud.It’s happened to me at First Choice Liquor in the past too (although only once). Apparently someone previously went through my local FCL and used a stolen credit card to pay for Coles Group & Myer gift cards.
