      That's means a lot, thank you for the compliment, fingers crossed our SA|WA customers feel the same as you do. A customer is a customer, regardless of their location in Australia. We do our best to put ourselves in the customers shoes first, then get back in our our shoes to see if what would be ideal for the customer is 100% viable on our side. If not 100% viable, then we get as close to 100% as we can. We're not perfect, so I'm sure we don't always get it right, but we sure do try and will continue to tweak our systems to further improve them for customers :)

      At present we don't have any instant/dissolvable coffee option. Ground espresso suits either an Espresso Machine or Stovetop Coffee Maker/Moka Pot :)

    • Get the aeropress along with some of the beans here (pre-grounded). Instructions are simple and you'll get a much much more decent result compared to instant coffee

      Great question, it's more than OK, it's delicious (only a slightly biased comment haha) for milk based beverages and cuts through milk exceptionally well. It's also fantastic for black coffee, in case you have both types :)

      * Sweetness = Brown Sugar
      * Acidity = Green Apple
      * Fruit 1 to Chocolate 10 Flavour Scale = 6.5

      * Process = Double Washed - Coffee cherries are placed in tanks to ferment for 24-40 hours before being pulped. The coffee then goes a further 60-65 hours of fermentation before being washed, this results in a extremely clean crisp flavour with a medium body/mouthfeel

      * Beverage Base = Black or White - Deliciously Sweet Black, Enough Oomph to Cut Through Milk

  • Love your coffee, i don't normally like South American beans but ill give them a go.
    P.S. I bought both kinds of decaf last time and one of my housemates was drinking it thinking it was regular caffinated stuff, it's absolutely delicious!

  • So happy for this bargain to be posted! Lime blue is the only coffee we need for our espresso machine :)

    I’ve been drinking the Colombia Huila Single Origin from the last deal but the Brazil is definitely the crowd favourite. With the Colombia even from fresh roasted I’ve had to put the grind setting on 1 (finest) to try and get the speed right which is a bit strange although I’m pretty new to home barista - using breville smart grinder and dual boiler. With the timing of the brew, do you count whilst the machine is doing preinfusion? What I’ve been doing is hold the manual button, machine does preinfusion and then when I see liquid start to appear out of the porta filter I quickly let go, pressure goes up to 10 bar or thereabouts, and I start the timer that split second. But I always end up with 20+ grams of espresso liquid in 15 seconds or so from that. Maybe I should be including preinfusion time in my timing. Or maybe time doesn’t really matter. I drink it with milk (milk lab almond), keen to try and get it to taste a bit less bitter and smoother, but maybe it’s just this beans that isn’t my taste preference. Trying to get scientific to get the best out of these great coffee roaster (thanks for all the support Tom!).

    Going to put some orders in for both this Brazil & decaf to keep the supply incoming - going through it all much faster than predicted is always a very good sign!!

      Very glad you're happy about our post because we're equally happy about your's, thank you so much for the terrific compliment!

      I really appreciate you taking the time to provide this feedback because not only do I hopefully have a simple solution but it will also hopefully extend the life of your smart grinder…running 20g regularly on a 1 either means your burrs are blunt and need replacing or your grind setting is too fine for our Colombia SO, either way it's a fast track to burning out your motor.

      Nice detail on the feedback very helpful. First I can confirm our recommended brew guides include any pre-infusion time. Second from the grind setting, extraction ratio to contact time and bitterness (which shouldn't be at the forefront) you're tasting I believe your shots are channeling. Basically this means too much pressure is building (due to super find grind) and the water is bypassing the coffee to find the path of least resistance, likely resulting in a watery far less than ideal morning kick start. You'll need a grind size several times coarser, it's a tad hard to tell you a specific setting as it varies based on burr use and calibration. My recommendation would be to start in the middle of the "espresso" settings and adjust from there. With your specific grinder it's best to adjust the settings while the burrs are moving and purge (grind and discard) about half a shot for each setting change and test, otherwise had your shot will be on the old setting and half on the new setting. See how you go with the above, if you're still having trouble please email the following to [email protected]

    • Indeed, you'd think a train would speedy up delivery with no traffic lights, but with less frequency, multiple stops and extra travel time to load and unload, it's far slower/more restrictive than road freight!

          Transitioning to new equipment can sometimes be a minefield. When you think the "I don't have a grinder" is fast approaching a change to "I do have a grind," feel free to email us with any questions. Even if we don't sell the coffee grinder you're after, hopefully at the very least we can point you in the right direction to find the ideal balance for your budget:convenience:quality equation :)

  • Really loved your Columbia SO beans on the amazing previous deal. Insane what a difference freshly roasted makes! I've been making daily Aeropress/Cold brews with them ever since and still have 3/4 of a bag left, so just wanted to ask: how long would you say roasted beans are good for? Mine are now about 3 weeks old and still taste pretty good, but I'm not sure if I should purchase more just because I don't want that freshness to disappear.

    • Frozen beans will last ages. After running out of my last batch, I tried a leftover bag from Axil roasters (frozen from 3/2021) which was still decent. That "fresh" taste will decline though after 2-3 months.

    • Woohoo that's wonderful to hear @caffeine69 I'm so happy to know you "loved" our Colombia SO and could notice the super freshness!

      Coffee stored at ambient/room temp is ideally consumed in about a month, thereafter oxidation increases and flavour starts to diminish. For a new order placed today, using our unique scheduled/delayed dispatch system, you can delay the dispatch date until the last Tuesday in January, if that's of any help to you? Otherwise, if you freeze (can do for several months and much longer if vacuum sealed) a sealed bag oxidation will rapidly slow thus extending the freshness, of course once defrosted the normal room temp storage freshness kicks in :)

          Appreciate you reaching out to check!

          Due to how freshly we pack our coffee, striving for dispatch within 48 business hours of roasting, we use one-way valves on the bags to prevent the seams splitting due to pressure in transit/before the bag is opened.

          If you have a vacuum seal container, then I'd recommend going for the 1x1kg option and freezing into quantities you can consume in 2-3 weeks, as it's less than optimal to take coffee in a out of the freezer.

          If you're worried about the one-way valve freezing in the open position and don't have a vacuum seal container my advice is as follows:
          1) Get the 2x500g bags. Open the first one and get stuck into the good stuff, while following steps 2-5 for the second bag
          2) Wait 7-10 days after the roast date before freezing
          3) During this wait time ensure the top of the bag folder over the bag (the same way we pack orders), so the bag doesn't balloon
          4) The one-way valve is only activated when internal pressure builds to the point where the bag has either ballooned or bag is folded over the top reducing the internal space for degassing. As such, it should now be OK to put the bag in the freezer without the top folded over, thus leaving enough space for any bag expansion without resulting in activating the one-way valve
          5) As an extra safety measure, if you're still concerned, to prevent the freezer atmosphere (freezer, other food smells, moisture…) penetrating the coffee you can put the sealed coffee bag into a zip lock freezer bag before freezing

          There are more things you can do to protect the coffee and extend the shelf life in the freezer, all methods have their pros and cons e.g. vacuum seal single doses

          Sure thing, really appreciate your patience and understanding. Honestly don't know what's wrong with them, they've had all year to plan for the Q4 busy season. Delays are so frustrating for us to see, even when it's only impacting a relatively small amount of orders, so I can imagine how customers may feel. Yes flood damage to roads and rail recently has caused some delays, but they don't have the staffing issues they had this time last year e.g. when one positive Covid case could mean 50 of their parcel sorting facility staff had to isolate… They did have a great start Q4 this year e.g. a surprising amount of our parcels dispatched on Black Friday (25/11) got delivered on Sunday (27/11), so I thought "great, delivery companies have geared up for the busy season and are working on the weekend." However, in the last week delivery companies have started dropping the ball!

          We're doing our best to address any delays directly with the delivery companies and we'll continue to do so, striving for a speedy delivery/resolution :)

  • I don’t know what it is, but with this Brazil SO I get inconsistent results.
    I am on my 3rd kilo of the bean (I am persistent) but I find I’m always adjusting settings trying to get the volume output to be consistent. The best I reckon I’ve had is around 4 cups in a row where the volume output is 2:1 in 27s. Then for example the next cup will be either 2.5:1 or 1.5:1 using the exact same settings, everything is weighed, WDT, 15kg tamper - everything I do is measured and consistent yet the output changes randomly. I can’t figure it out. It’s only with this bean.
    In comparison, with the Columbia SO I went through 2kg straight with only a minor change to grind as I got to the end of each bag and one adjustment when I opened the 2nd one fresh.
    Anyone got any ideas?

      I can't promise that you'll enjoy the flavour of our Brazil SO (although I sincerely hope you do), but what I can promise is that any extraction inconsistency isn't as a result of our roast profile as we check our batches. I believe the inconsistency is as a result of the equipment/settings, which we can hopefully tweak towards consistent extraction. Could you please let me know what brand/model grinder and espresso machine you have?

        20g VST basket. 20.0g in, target 40.0g out in 27s.
        Every other bean I buy, I dial it in once and I’m set.
        This Brazil SO, I am always adjusting.

              We recommend you use the brew recipes as a guide to dial in your grinder and set the machine volumetrics. For ease of reference I've put the guides below for you :)

  • Really enjoying the Brazil SO with milk. Will order more at the next discount. Out of curiosity why do you recommend a different brew ratio between black and milk?

      Nice question, it just comes down to balance of flavour. Both 1:1 and 1:2 ratios work really well with milk, we just found that 1:1 with milk is that little bit more delicious. In terms of black coffee, 1:1 is likely a bit too concentrated in flavour, as such 1:2 is the best bet for black coffee :)
