    Would like just the frypan for half the price - no idea why you would want a non stick wok…..surely won't last too well on high heat

      They call it a wok but the sides aren't very high, more like a deep pan, I usually use these type of "wok's" for cooking curries where I need the extra space for all the liquid

        100%. I have an Asian grocer bought high heat steel wok for the stir fry stuff. And a cast iron pan/ beast for steaks. These are great for eggs and bacon and curries.

      Wok is not that big…more a cross between a saucepan and frypan..find it good for pasta though

    Has anyone ever paid $299 for these? RRP for cookware is like knife sets or Persian rugs, always deeply ‘discounted’ to show you the huge ‘savings’ you’re getting.

      • BigW are not the same, they are cheaper ones with a heat resistant plastic (non stainless steel) handles.

    • Note that these virtuoso ones are better quality yes but also are pretty heavy. Something one needs to think in mind.

    I'd rather buy theses since they are 'Made in France', so are bound to be different to the 20 other generic 'made in china' non-stick pans, labeled as 'pro', 'virtuous', or whatever.

      That one is made out of aluminium vs stainless steel for the virtuoso.

      • Yeah, doesn't that just mean it's lighter and heats up easier? What is the exact benefit of stainless steel over aluminium non-stick cookware.

        The other guy was telling me how the more expensive stainless steel pan with a stainless steel handle is better than plastic, but in my experience plastic is much more practical since it doesn't become hot to the touch.

        • I'm no expert but I believe S/S holds heat better so it's better for searing for example. S/S allows you to use it in the oven at higher temperatures?
          All cheap frying pans are made out of aluminium so surely there are reasons why more expensive ones are S/S.

              @BargainHunterJohnnyB: Honestly, there is so much BS with Tefal's range of products. No idea why they even have so many different lines of products lol
              The one you posted has 2x titanium vs 3x titanium on some of their other products. Would this even be noticeable? I doubt it.

            @keejoonc: Aluminium is used as a heatsink, it spreads the heat souce better. More expensive pans will use a layer of aluminium in the base, but be made of stainless steel, or more premium- copper.

            Stainless steel doesn't really have any practical use if it's non stick, the non stick coating will ruin heat transfer anyway. I would rather a aluminium pan with high quality non stick, vs a stainless steel pan with teflon

              1. SS costs more than aluminium
              2. I just don't want any of my utensils to be made of aluminium. Just to reduce the risk of 'eating' any aluminium particles. But again I may already have eaten too much of the non stick coating particles which are probably even worse…

                @sol3x: I agree, best choice is 100% stainless steel, cast iron if you can be bothered with the maintenance. I've also looked at 'non-stick' ceramic, but it is so poorly performing it seems to be the worst of both worlds.

                However if you must use non-stick, stainless steel will have more hotspots - particularly on a gas hob. It's the high heat that causes the teflon to degrade and enter your food.

                The cost of steel vs aluminium might be $2 difference, the difference in RRP is purely marketing

                1. That's a bad thing for a disposable item (which a non stick pan is). I'd prefer the cheaper aluminium, when there aren't really any benefits of using stainless steel in this application.
                2. If it's non-stick, the aluminium is coated / anodised. So not really an issue. But if you just want to avoid aluminium altogether, fair enough - that's a reasonable approach.

            @Fobsessive: Sure - but they are not talking about full stainless steel, they are talking about non-stick pans. Non-stick pan made of stainless steel vs non-stick pan made of aluminium.

            Non-stick pans are pretty much a disposable item - the exact opposite of a BIFL item, so that's not really relevant to the question.

            (Just to be clear, I don't disagree with you - just disagree with the relevance.)

      Apart from the fact they are different sizes, is that the only difference?

  • Steel is best if you have magnetic induction hotplates (which, if you don't have, you should think about converting to). Cheap aluminium pans also warp, where a good solid copper or steel pan is less prone to, and steel gives a more even heat throughout, whereas aluminium tends to heat up quickly but also cool quickly, which can lead to uneven heat regions. Personally I'd like a thin SS baseplate layer with the rest of the pan aluminium, because my wife has damaged wrists and arms so can't lift anything but very light pans. But I'll keep dreamin'…

      I think you have mixed up the metals. Steel is more prone to hotspots than aluminium, being the better heat conductor.

      Aluminium would be ideal, however it doesn't work on induction. You also don't want to cook on an aluminium surface as it is (probably) toxic.
