So I recently bought a Lor coffee machine from Coles for $79.00 and about 2-3 days later I saw the price drop to $60.
I have already opened my machine and was wondering if there is any way to get the difference back?

No, the fact Coles sold it for $79 and then could afford to sell it for $60 a few days later is fraud.
Regardless, I don't see how Coles would be any the worse off by buying a new one and then returning it with the old receipt?

Sure, it’s bad luck that OP missed the deal but this has nothing to do with what Coles can afford. These promotions are agreed upon with the manufacturer to start and end at predetermined dates.
