I just returned from NC. Some info that may assist others:
Food is really expensive in AU$ terms. e.g. half a chicken and chips in supermarket is AU$13. We were regularly spending AU$100 for lunch for 4 people in an average eatery.
We appreciated buffet breakfast when it was included in our accommodation as we could eat too much and take away a baguette and cheese for later. Do not get breakfast included for your last night as the trip from Noumea to the airport leaves very early before breakfast starts.
The Museum of NC is currently being re-built so there is nothing there.
There wasn't much in downtown to interest us.
We enjoyed the zoo and the aquarium.
The cultural centre is a large site but there's not much in English to read. Apparently there is a tour in English on Thursdays.
We enjoyed snorkelling on the reef under the huts at Illot Maitre. Lots of Green turtles can be seen there as well and lots of coral fish varieties and also Kraits (sea snake). You can get there by water taxi or a scheduled ferry transfer from Port Moselle. We brought our own masks & snorkels but guests at Hilton Doubletree on Illot Maitre can borrow one from the watersports office at no charge.
    The sunsets were very nice.
It is pretty hot and humid when it is not raining. I only took minimal changes of clothes and regretted that. Plan to spend a lot of time in swimming gear and plunge in often to cool down.
The Air Calan fare is a code share with QF but if you don't pay the QF fare you will not be eligible for access to the lounge in Sydney. QF had beer on the flight over (150 lashes) but not much else alcoholic. Air Calan was nice. We were offered an omelette on the way over for breakfast and something similar on the return flight.
There is duty free available on entry to NC but it is expensive, We took a bottle with us from Departures in Sydney,
The Geant Supermarket in Saint Marie has a liquor section with Belgian beer and French wines on the shelf.
I really enjoyed the "Havana" amber beer which is brewed locally. This was available in a 4 pack from the supermarket. This isn't available in the restaurants though - they stock the regular variety.
I think 6 nights in the one place would be a little too long.
We pre-booked ground transport with Arc en Ciel for transfers to/from the airport. The local taxi drivers tried to convince me that for a family of 4 it would be cheaper in the taxi. I don't know if they are right because I didn't try it. Local taxis take local currency only - no cards. Everywhere else took cards. There is an ATM at the airport. You can ask any shop to call you a taxi and they are happy to do so. Short trips around Noumea were cheaper and more direct than the bus for a family of 4.
There is lots of free wifi around Noumea. We did not use a local sim card for our 2 week stay,
We got out of Noumea to La Roche Percee near Bourail about a 2 hour drive north on the West coast. That beach is a nesting site for loggerhead turtles and we were lucky to see an adult returning to the water after laying eggs at 5pm and at 5am we were lucky to see baby turtles making their way to the ocean. YMMV.

There is a casino near Le Meridian. We didn't go there. I have a 500CPF voucher and a free drink voucher if anyone in Sydney wants it.

We had booked a side excursion to Iles des Pines for a weekend which was unable to proceed due to bad weather (cyclone in the area). Our Tick Travel insurance would have covered it (with an excess) if I had included the natural disasters coverage option. Unfortunately I did not include it.
