    which is the shit one pyrex or Pyrex?

    • This seems to be PYREX (the good one).
      If the logo is in upper case lettering, PYREX, it's most likely made of borosilicate, and thus safer. The lowercase lettering is most likely made of soda-lime glass, so take extra care after any high-heat cooking. Most glassware products will include warnings so make sure to read about proper handling, cleaning, and storage.

      Borosilicate is the good one. Soda lime glass is the exploding variety.

  • Dumb question from someone who doesn't know their way around kitchens- why would you choose something like this (glass, even if it's borosilicate, presumably is less resistant to thermal shock) over cast iron / a dutch oven?

    I guess you can see through it… that's the one thing I can think of.

      Could be because it’s lighter and easier to make use of than an alternative. For example, if you’re just baking a lasagne or quiche and don’t need huge heat retention with a cast iron pot.

      But then corningware is also great as a lightweight option.

      Maybe PYREX is also good for going for frozen to oven immediately? Whereas others aren’t able to do that. You can’t freeze a cast iron pot that contains leftovers.

      So maybe a few reasons. But I think it’s a case of old options being supplemented with new options over time, and then we end up with a spectrum of options that all slightly overlap in different ways.

      Also, some people just like different things for no real reason

      Also acidic foods (eg anything tomato based) aren't really good in cast iron (enamel is ok)

      Also maintenance - glass is essentially zero maintenance, and suitable for a dishwasher.

      Three reasons would be if you want a shallower dish to make serving easier, if you think it'll look more presentable at the dinner table (for whatever reason), and because you can microwave it. I use glass dishes for casseroles/lasagna etc., it's convenient to take it directly from oven, to table, to fridge, to microwave the next day

    • No such thing as dumb question, but no you can't, unless you want shattered glass shards all over your kitchen.

      You can go straight from freezer to oven. Or straight from oven to cold water to wash up. Mostly convenience.

      Toughened soda-lime glass (US and Chinese made pyrex) will shatter if you do that.

    BigW also have a range of Borosilicate pyrex. Make sure to look for the french flag.

  • Panasonic has a 4 in 1 microwave oven with steam, grill and convection funtions. So glasses are really good in this scenario, cause I can use 4 functions on a glass container to significantly shorten my cooking time yet get the caramelised flavors and burnt look. And if we can't finish the food, the glass container can go straight into the fridge. But it's just my wish, we finish the food most of the time.
