Instant coffee has smoother and milder flavour because it is made from lower-acid, lower-oil beans. I don't enjoy intense or too 'busy' coffee, which is typical of coffee from my local campos baristas.
@CptnObvious: AFIK, freeze dryed and spray dryed instant coffee contains only water soluble components of coffee and removes any oil based components.
I personally prefer moccona coffee for the same reasons you mentioned. Once in a while I buy aldi ground coffee, brew(using knock off aeropress) a teaspoon and mix it with moccona to get full body coffee.
I love instant coffee because it's fast, cheap, and incredibly easy, and has "good enough" taste. Don't yuck our yums.
I too share a strong disdain for instant coffee but taste is subjective, if people want to enjoy what I consider a sub-par experience, that's up to them. There's plenty of shit "barista" coffee out there (7-Eleven, Maccas etc).
@Ham Dragon: Jump in to defend Maccas, I found quite a lot of their cafes make good coffee, at least better than my local cafes in particular the Coffee Club.
@sistermay: Coffee Club is equally dog shit, so not a lofty bar to exceed. McDonalds sells very bland, inoffensive coffee that appeals to normies. That's all good, not my thing but clearly it is for a lot of people, Ronald sells something like 33% of all takeaway coffee in the country.

I enjoy both the taste of brewed coffee as well as the convenience of the instant coffee brand I have taken a liking to. Good on you for being a lover of ‘real’ coffee (and I know plenty of people who are inclined this way), but can’t see why that should preclude you from a normal, respectful interaction with those who may have a different view
I disagree. Douwe egberts instant coffee is decent. Good for when you can't carry fresh beans, a grinder and an espresso machine.
What annoys me is they changed the moccona recipe but kept their stuff tasting amazing so we get impacted in Oz but not in Europe :(

Sometimes it's not practical e.g. time constraints or equipment or cyclone alfred. For these times instant is good. I get that you are passionate about freshly ground coffee but it's coming across as a bit snobbish and Ill-informed
People get used to the shitt coffee. If they drink good coffee for a week and don't care about the extra money, they never go back.

My old man has been drinking this coffee since it was first introduced to Australia, some people prefer convinience/familiarity over taste.
Keep drinking your overrated, overpriced cafe coffee that comes in a little dainty cup which you pick up with your dainty two fingers and take little sips from for over 20 mins because it makes you feel special.

I’ve had worse barista coffee than Moccona. This is super convenient and sits in middle of awful and super tasty barista coffee
On another note, a lot of people do pour boiling water on instant coffee which burns it.
How I make is take 30-40 ml of cold water in a cup and fill it more than 2/3rd with cold milk. Take 1-1.5 spoon of coffee and mix it really well. Microwave till boiling and then add milk to remaining cup. Super easy and you are done in less than 2 mins
Not everyone has the time or money to drink fresh coffee.
While instant coffee doesn't taste the best, it's still okay and does its job, saves time and is more affordable.
I like to get milk based coffees from various cafes but also like to have instant at home for a cheaper option some times.

If I make cold brew, I buy 1KG of beans and it makes about 50 coffees. $50-60 for beans. takes me about half an hour of grinding beans and setting up the tap to drip through. (hand grinder only does 2 cups at a time, Hario pot takes 3-4 of those)
I can walk to a very good cafe 5 minutes each way and pay $5 for one coffee (same beans as above, its where I buy them)
if i buy 1 400g jar of this stuff it makes about 100 coffees (2x teaspoons per cup, approx 4g). $19.50 for a jar.
Purely on value, instant coffee is leagues ahead. not even close. does it taste as good? no.
Barista made coffee with perfectly heated, silky milk/foam is great, but $5 a day adds up and sometimes its raining, or Im running late.
my cold brew is an ongoing experiment. Im constantly changing the grind, adjusting the brew time, changing the milk/coffee ratio. its sort of a hobby. its fun!

I’m a big fan of freshly ground coffee, but after learning how to make a good instant coffee, especially at the office, I’ve started enjoying it almost as much as coffee from a manual machine. I picked up the technique from a subreddit post, and it really made a difference. Give it a try, you might start appreciating instant coffee in a whole new way.

If you don't like milk-based coffees, microwave the cup with with just covered granules for 30 seconds, boil some water separately and pour it over for something more akin to a long black or just drink the pseudospresso as is.
Here's why it works Australians were taught that instant coffee works the same way as tea, where you pour boiled water over the thing and then add a splash of milk. The problem is that the way that instant coffee is made is that you're just reliquifying dried already brewed coffee, so you don't need boiling water to activate the brewing process. America is where instant coffee was hugely popularised, and is a land largely without kettles or tea. They either will bring things to a boil on the stove, or in the microwave. It was designed to be brought up to temperature gradually in a stovetop pot, and then eventually microwaved.
By bringing the coffee up to temperature gradually, it prevents the astringency typically associated with instant coffee. I don't pretend to know the science behind it, but the results speak for themselves."
I do love my gourmet instant coffee and Moccona is by far my favourite. When I'm on the road I have a jar of it beside me. I put some in my mouth, have a drink of V and shake my head around to mix it up. Great for the red-eye runs out to Wagga, and it pairs nicely with some happy hardcore from the likes of Scooter blasting through the JVC speakers.
$48+ per kilo is kinda steep… to each their own.
Current deals for whole roasted beans are $31-$32 per kilo.
I don't think that math works, since a single espresso shot uses much more beans in weight than the amount typically used for a cup of instant coffee.

Anyone have an opinion on the differences between "Indulgence" vs "Classic Dark Roast". Both have an intensity rating of 8. (wife currently drinks Indulgence but largest size is only 200g)

Extreme weather on key supply markets such as Brazil and Vietnam plus the continuing increase of container shipping rates and other supply chain issues has lead to coffee price increases over the last year. Next harvest is predicted to be a record production wise but will prices drop or will someone bank the extra money?

Pretty much, closer to the discounted price before Covid (about $16), if my memory serves me right.

Vittoria or Moccona?
I have not tried Vittoria instant, but Vittoria Latte pods are great.
The Vittoria in the gold label is much nicer than Moccona #5 (as they changed and ruined the recipe several years back).

I have one L'OR Supremo capsule in the morning, then the other coffees throughout the day are Moccona Medium Roast.
I used the pods to convince myself to give up my many year addiction to having a daily cafe coffee about 9 months ago (and it worked!) and honestly they are more reliable in terms of taste than a barista made coffee, and it works out to less than 40-50 cents per pod, vs $5-$5.50 for a cappucino at a cafe.
