    Wow, certainly didn't expect to see a deal for yanagiba's on OzB. Not sure how good Shun would be, but for real Japanese knives that you'd get in Japan, try http://japanesechefsknife.com/default.html. When hubby did a sushi course at the Tokyo Sushi Academy, the instructor recommended Masamoto.

      Good advice. I've had a Misono ux10 210mm gyuto from JCK for a few years and I wouldn't want to go back to lesser knives. I'd probably go for a Masamoto over a Misono nowadays too. Only $7 flat rate shipping from Japan.

      I went through a similar buying situation, first real decent knife etc.

      Ended up with the Fujiwara FKM Gyuto 240mm Knife…amazing piece of kit @ $90 shipped. Recommended pretty universally by every dedicated knife forum I visited at this price range.

    Shun is a good brand in this price range. For clarity, this is a right handed sushi slicing knife. You will need a means to sharpen it periodically which is complicated by the knife having only one bevel. I bought a left handed Mizuno Tanrenjo knife from JCK. Bloody expensive but a hand made work of art.

  • Shun are one of the top knives you can buy. Seriously sharp. Having used Mundial and Global, these crap all over them. Just don't let some random knife sharpener at it. Needs to be dedicated Japanese knife sharpener as they are a different blade angle than most European knives.

      Wouldn't use anything other than a whetstone for knives at this level.. certainly wouldn't be dragging it through one of those slot sharpener devices.

        Agreed, definitely whetstones - coarse grit followed by fine.

    I'm going to make myself small over here, $134 sounds a lot for a knife but I'm not going say it loud, I don't want to be Shuned.

    • You certainly wouldn't want to be, not with a knife that sharp.

      On a side note, I'd just received the Global cook's knife that's half the price of this deal. Man, the potatoes didn't even put up a fight! Would definitely love to see how much better this knife is.

      • Ever tried using ceramic knives? My better has been complaining about how sharp they are (she's got heaps of cuts to prove it)!

        Yanagi ba's only have one angled side, and are for usually used for fish and seafood in japanese cuisine, they're not really general use knives,and certainly not very useful for potatoes. There's a different type of knife for vegetables.
