Flavour profiles and roasts. Espresso coffee is normally roasted darker than filter/aeropress.

You can just make a note on your order when ordering online that you want it ground for cold brew :)

You can even grind frozen beans right out of the freezer, a lot of roasters/cafes do this with special coffee that's stored for long…
