      …if anyone's wondering, sous vide produces steaks that are perfectly cooked all of the way through, for a minimum of effort. The steak on the cover of the book (in the screenshot) goes from caramelised outside to a band of grey well-done meat to rare on the inside. A sous vide steak is one colour all the way through - exactly the level of doneness you prefer- with a little caramelisation on the outside for flavour.

      They are unreal.

          We having some hard time with TPP hosting.. I guess you are right we need to move our website to Amazon. TPP is hopeless they can't handle 100-200 visitor downloading 5MB book.

  • hmmm I couldn't download the book due to server error, but i see you recommend instant read thermometers to gauge doneness which is a good sign.

    There's lots of superstition and old wives tales around cooking that need to be dispelled. And injecting some empiricism really makes good cooking more accessible.

    Thanks, got the downloads through eventually.

    Hint, don't stop when error message appears at each step, simply repeatedly reload the page at each step using the 'reload option' on the page/tab. Takes persistence but it does go through with a little patience.

    Just had a quick browse - 2 common steak cooking tips in the book I take slight issue with.

    1 - "Excessive flipping leads to loss of juices" - this has been thoroughly debunked by food science.. read McGee (or McGee's biggest fan Heston Blumenthal), or check out serious eats. On a screaming hot cast iron pan, flipping every 15-30 seconds is one of the best ways to ensure you still develop a Maillard crust while minimising the so-called "bullseye effect".. you can read the link I posted above or check out Heston's vid here: http://youtu.be/nhOV89EQtJs

    2 - "Seasoning prior to cooking inhibits crust formation" - this is true if you season just before cooking. The salt draws moisture out via osmosis. This moisture evaporates, cooling the surface of the meat and inhibiting crust formation. After a few minutes the moisture drawn out by the salt actually mixes with the salt and starts to absorb back into the meat. After 40 minutes or longer most of the salty moisture will have absorbed back into the meat ad will begin breaking down some of the salt-soluble proteins in the steak (mainly myosin i believe), helping your meat retain moisture by reducing shrinkage, and ensuring your steak is well seasoned throughout.
    Ideally try salting a steak the day before you cook it and leaving it in the fridge on a wire rack. The salt will be absorbed and the dry atmosphere of the fridge will ensure the surface of the steak is dry. Patting a steak down with paper towel before you put it on the heat is a good habit to get into - the drier the surface, the better your crust.

        You realise that meat is prepared in open air, uncovered inside a large fridge (called "butcheries"). Meat is stored uncovered in large fridges (called "coolrooms") both before and afterwards.

        It is only supermarkets that started the trend of wrapping meat in plastic.

      • @erwinsie Nah it's fine. Premium dry aged beef gets left uncovered in refrigerators for over a month. Leaving a steak uncovered for a day or two won't do you any harm. Any pathogens will be on the surface of the meat and will be neutralised when you chuck it on the heat.

      This doesn't touch on sous vide, which imho is the ultimate technique for steak, but not many people have the equipment/can be bothered.
