  • Has anyone found one of these at any other store? Also I would be hugely appreciative if anyone can share their experiences with this unit. It was previously on sale

    21/06/2014, $129

So hopefully someone has picked it up and has something to share.

Reading the comments there were several concerns regarding the temperature accuracy, which is potentially dangerous given the low temperatures used in Sous Vide.

    • Was same price at Lutwyche in Brisbane, heaps left.

I bought one when they were $129 and returned it under their money back guarantee - temperature was meant to be +/- 1degC but I found it was out by closer to +/-5degC (which means that attempting to cook a steak medium rare meant you could end up with one anywhere from rare to medium, and chicken etc could end up dangerously undercooked). Even at $89 I wouldn't bother.

I have a Sous Vide Broiler. I buy Whole rumps, Rib Fillets, Blades, and many other cuts. No need to worry about tenderness. If you cut these into 1.8", 2.8cm steaks, cryovac and cook-in-bulk for 18 hours at 58.5 Degrees Centigrade, then drop in iced-water in the sink. Freeze. Take out and defrost for two minutes(+-) in microwave (more if more than one) Try to have it at room temperature before you fry on sizzling high heat. It is called blackened steak and only needs to have the outside "blackened" as the inside is already cooked. Serve with your favourite sauce & maybe some caramelized onion and salad. My current favorite sauce the simple and brilliant, mustard/BBQ combo sauce.

Wouldn't microwaving it, ruin it? I know that anytime I microwave meat to reheat it's terrible.

      • Doubtful. The meat has already been cooked, so very different behaviour to raw. And you're only doing it to defrost, then pan fry.

  • I'm actually looking for a vacuum pack machine that Aldi sold at the same time these Sous Vide went on sale. Has anyone spotted any in/around Sydney?

    • I don't like your chances. They sold out in about 5 minutes around here.

Two things are a must-have for Sous Vide. A good Vacuum Packing Machine (Cryovac is the extraction of air from the plastic bag which contains the food is to be cooked in and later to be kept frozen in, and secondly the Sous Vide broiler temperature control must be accurate to a fraction of a degree i.e. if you set it at 58.5 then it is allowable if it varies by .3 either way. Any broader variation than that will end in over or under cooked meat.
