For those with a taste for alcohol… Duck a l'Orange. We use the Australian Women's Weekly recipe.

Duck and pork terrine with the breasts and duck rillete with the legs. I've made that today, amazing taste and one terrine in the freezer for Christmas day now.

I wouldnt think logically so. Duck has more fat due to evolution needing them to store fat over winter to fly south etc
