    Lucky they are Australian flathead and noit that crap South American Flathead that I&J flog off for real flathead. South American flathead is a type of perch - rubbish fish. Be careful read the fine print.

    I can guarantee this is NOT flathead. Most people have never even eaten actual flathead because generally, fishmongers don't sell real "skinned and boned" flathead fillets, and Woolies sure as hell don't.
    Cutting the belly cage/lateral line bones out would result in a fillet which was very skinny and result in too much waste.

    They just cut some large skinned fillet into thinnish strips and call it flathead. I know a fishmonger who admitted to doing it.

    It's odd that this industry can get away with calling a meat product a completely different species and get away with it. Imagine if they started selling horse steaks and just called it prime beef?

      The stuff I have had from Woolies is real flathead. I have been eating flathead for years from various sources including the whole fish and I am aware of what looks and tastes like, the only fish I have tasted that is similar is Gurnard. You are right about the waste though about 60% of the fish is waste, which means often skinless and boneless fillets are $50 a kilo. You will find most of the fillets are from woollies are really small around 100g and v-shaped because the bones have been removed. Generally because the fish was young they taste amazing. The real problem buying flathead from a fishmonger is they get a huge older fish and cut them down to smaller pieces, generally these fillets are tasteless because the fish is was older and bigger.

    $31.99/Kg all the time at Costco Docklands. I know they sell genuine Australia flathead as I got one fillet that wasn't skinned and it was an unmistakable sand flattie.
