This classic cookbook written by the late Marcella Hazan is often mentioned as one of the best italian cookbooks ever written, praised by chefs and celebrity cooks. It is a 700+ page hardcover tome, doesn't have colour photos but has some nice illustrations and quite detailed instructions. Recipes list ingredients in both metric and imperial measurements, and are very achievable for the home cook.

I have the Silver Spoon which has turned out to be rather underwhelming, and recipes don't seem that accurate. According to reviews, Marcella's recipes are much more dependable.

    Am I the only person who will not buy cookbooks without photos? I love cooking and enjoying trying new recipes, but much of food is a visual experience. Having photo references creates instant attractions and teaches you about beautiful presentation that can be transferred from one dish to another.

    Having said that, at this price I will pick up a copy to learn new techniques.

      Yep, I also love looking at photos of the finished product to inspire me to cook. It would be quite difficult to take photos for a cookbook of this size though, imagine bulking it up to 1400+ pages :P. One advantage of not having photos is that it doesn't date.

        While a 1400+ book would indeed require double my non-existent muscle to handle, 700 recipes is quite an overkill, I'll have to wait and see just how many of which are 70%+ identical just with a different twist, if they cut the book in half that leaves room for all the photos!

    Love this book. Have had it for 5 years (the osso bucco recipe gets a work out at least once a month), and it's so extensive that it is literally the only Italian cookery book you'll need. Once you prepare things Marcella's way, there's no going back.
