  • As I am looking at moving out (finally), how would you guys rate these knives? Are there any other brands you would give a go?

    • I bought a set a while back and while they were super sharp initially they dulled very quickly. There are visible dings in the blade of one and it hasn't really been mistreated.

      I get the feeling they are the Bose of knives…

        If you have visible dings, a whetstone can be used to smooth it out.
        Can't use these on extremely hard items such as butternut pumpkins.

        Sounds like you need german knives, they're heavier and thicker than a japanese knife, a little bit more durable, but can't be as sharp (due to angle of the edge) as a japanese style knife.
        Try wusthof, henckels knives.

        My favourite knife is still a $55 victorinox cook's knife, ridiculously good value for its price.

        I get the feeling they are the Bose of knives…

        They're the most well-known japanese brand to westerners. Not exceptional, but not too shabby.

          Depends on what you're cutting, this is what I use (stamped blade) when I'm not trying to hack chickens apart, the fibrox one is cheaper and dishwasher safe but I prefer a wooden handle:

          Could go for a magnetic wall mount as well but didn't want to do any drilling.

          I'm missing a paring knife in my tool set so I can't recommend one yet.. Knives online has the forged 9cm and 10cm Victorinox paring knife at $45 from memory but house has the El cheapo Victorinox paring knife (stamped blade) for $9 (before 20% off)
          Don't have a bread knife either, no need in my household, we don't buy crusty bread.
          For normal rectangular loafs the chefs knife will suffice.

      Not much if you're referring to the sets, they all have the core paring knife, cooks knife, utility knife, the others vary, and also the block they come in.

          Depends how you look after your knives, most people forget/can't be bothered to regularly hone their knives. Any knife that doesn't get regular honing will dull quickly.

          The advantage of the harder steel is that, if maintained, will last longer between sharpening.

          The down side to harder steel is that the sharpening process takes a bit longer. Not really a big deal if you don't let the edge get too dull.

          Honing is keeping the edge straight. Sharpening is removing metal to put an edge back on.

          Whatever you get, don't clean it in the dishwasher.

          A well maintained edge has a very small amount of metal at the apex and doesn't take much to damage it. It will bend or chip depending on the steel.

          Dishwasher detergent needs to be a lot more abrasive…imagine trying to clean you dishes in the sink without touching them (with a sponge or brush) using regular detergent to remove the dried up food. There's the risk of bumping hard objects in the dishwasher. Even the crap coming off the rest of the plates and cutlery in your dishwasher hitting the edge at high speed will mean it dulls quicker.

          Wash (or at least rinse) your knives straight after using them. If you've been cutting something acidic like citrus or tomatoes then don't leave it long.

          Never cut on hard surfaces like glass, stone or metal. Wood's the best and if you want to get anal, go for an edge grain board.

          Not the end of the world but if you want to minimise edge maintenance, when you're scraping food off you chopping board, use the back of the blade rather than the edge.

    I ended up getting this 4 knife set and the 3 stage sharpener for $281.48 AUD.

    Was going to get one of the full sets but figured I'd be unlikely to use the other knives and read on amazon that while the knives are great the wooden blocks aren't very good quality.

  • What's the difference between the Global block sets? Are the knives different or is it just the type of knives you get? As in, why would I get Kabuto over Ikasu? Both 7 knives..

    • Kabuto vs Ikasu, in terms of the knives - there's no difference. Only difference is bamboo block vs metal block.
      Different sets will have slightly different knife combinations.

    • Is it your first "expensive" knife, by expensive I mean $40+ a knife?
      If so, go for a victorinox fibrox/rosewood. They're like the SSDs of the kitchen world.
      I still like my victorinox knife over my global knife for every day chopping due to the price vs performance.

        • Victorinox is just good value in terms of price($50-$60 for a stamped blade), holds its edge and performs similarly to $200 knives (as tested by America's test kitchen).
          Go for global if you like them :D
          My global g2 20cm knife just has a rounder tip compared to my victorinox 22cm.
          The G2 is better shaped for rock chopping that's all

          You only really need a cooks/chefs knife + paring knife for most things.

          Yes it would be more expensive if you buy all the individual knives by themselves vs buying a set, however when you buy a set you may not use them all.
          The knife block is only good if you have a few knives here and there, when you build your own collection rather than buying a set :)

I think I'll just go with the one with most knives just to be safe (most likely Ikasu). Good to know I could always buy a new knife block if needed.

          Legally they are not obligated by Australian Consumer Law to give a refund under change of mind.
          If it is unopened you could try spin it off as "I tried to give it to my friend but they were.. disappointed because they had their own already and I already have my own knives.."

          If you're lazy get the minosharp ceramic wheel sharpener. It will restore the cutting edge very quickly :)

          If you want to be able to repair your global knives if there's chips in it (cutting through extremely hard things, i.e. butternut pumpkin)
          You will need a whetstone and a guide rail. This is what I do :)

          Grit guide to whetstones
          1000 - coarse
          3000 - medium
          6000+ - fine

          You only need to use a 1000 stone if your blade has chips in the edge, or is extremely blunt..
          You can still do what a 1000 stone would do with a slightly finer grit like a 3000/4000 grit whetstone, but you would need to do it for longer.

    • Its ok, I would prefer the ceramic wheel. The one in your link will have two blocks of metal (usually tungsten carbide) angled to create a V shape.

      They will give you an edge, but not restore a chipped knife, then again a ceramic wheel sharpener won't either.
      Should be a good starting sharpener :)

      Just be aware if baccarat knives are a western style blade or a Japanese style one, because it will have a different bevel angle to a global knife.

          I have rust on some of my knives too, not just Global, on my Victorinox. They're due to not completely drying the knife after you wash it, so make sure you clean your knives properly and wipe it dry with a towel/paper towel right after!

          Stainless steel still has iron content of it, so any moisture content that hasn't been removed will react slowly with the metal!

          I just use the highest grit (fine) whetstone and you can polish the rust off!
