I'm sure it's a good buy, but I just hate those PPE handles………..Sure, have them on a $10 knife from Target, but not on a decent blade.

I bought these Made in Germany knives 4 years ago and I love them! I only hand wash them and they are still looking like new apart from the paring knife. My wife keeps putting it in the dishwasher and the handle has faded a bit.

  • List price of $299 back in 15 May 2018. I'll spend the $10 saving to buy an extra knife from Target to compare the handles.

  • Stamped or forged?

    • Deff stamped.

Henckels describes it as "Precision-forged from a single piece of steel, the Sigmaforge process involves applying temperature in a controlled fashion, heating only the portion of the 'blank' that is needed to be worked; this not only prevents detrimental influences on the quality of the steel but also requires 70% less energy than a traditional forging"

it's basically a stamped blade with forged bolster that is then heat treated/ice-hardened (friodur process)

      • Thanks for adding that. Interesting.

  • So the tang goes to the end of the handle? (I find that very unlikely, these are prob a 3/4 tang but you never know)
