Target Nova Santoku or Chefs Stainless Steel Knife 18cm $2 at Target Casey Central. Nice little knives my mom and mum in law will be happy to receive. They are very light so not sure how long they’ll last but $2.

Neither are we, since "Stainless steel" is pretty vague. There's over 150 different standard grades of stainless steel, and they all vary widely in performance. Only some are good for knife making. Ones that hold a sharp edge tend to rust more easily, and ones that don't rust easily tend to blunt more easily - only a select few grades are good at both.
I suppose if it lasts 3 months is still as good "value" as an $80 knife that lasts 10 years.
Shame honing steels are not $2 also…
I have a 20year old victorinox large knife that I use every day and it still looks like new. It was $200 in 2000.

Only lasts "3 months" you must be using it for chopping firewood. It's a kitchen knife and will be fine using as intended.
Of course! It was just an example of how this knife could still be good value from even as a "throwaway society", which is what it would be if you decided never to sharpen it.
My past experiences with cheap knives from aldi using cheap stainless steel is that they go blunt very quickly.
If you sharpen it would definitely have a longer useful lifespan, but $2 certainly does not include a sharpener or honing steel.

These knives re actually pretty good for the price once you sharpen them. Have had one of the "chefs" knives for about a year and a half, holds up pretty well. That said it absolutely does not compare to any of my more expensive knives buy hey, not everyone can afford to drop a few hundred on a single knife.

They're leagues apart. That said my globals tend to lose thwir edge faster than most of my other knives.
Jenny, do your Globals look anything like this? It is a line of pitting/rusting between the handle and the blade. These are ~19years old, but have been like this a while.

@hodgeheg: More spot rust rather than a line. I suspect the line of rust is from being stored while wet? Just a guess.

@montorola: I've used a few different brands. Global, Masahiro, Shun, Wursthof and some other brand I forget the name of make up my main set of knives and would generally be the brands I'd recommend going for. I've also used Baccarat and Scanpan knives (lol) in the past s well as the "forever sharp knife".
I usually use my Masahiro santoku for every day stuff, but maybe a Wursthof chefs knife would be a more common starting point.

Globals = garbage. Spend the money and get a Wusthof (classic range) or Mac knife. So much nicer to use, you will look forward to cooking.

I don’t skimp on knives. I have two sets of Wusthof knives. One set is over 20 years old and they are still going strong. You need a knife with good balance. For me these are the sort of thing you have for a picnic or in your AirBnB property. Where there is a risk it will get lost.
What do you sharpen them with?
Japanese whetstones of varying grit.
Honestly I don't expect a blade like this to hold much of an edge, even a ceramic pull-through should be good enough to keep it in usable condition.
I use these and sharpen them with the Global mino sharp shapener. I have a 10 year old global knife which is comparable but has a little more heft compared to these. Paid $120 back in the day for the global.

thanks OP, my wife doesn't like knifes that would make her fingers bleed if she cuts on them. these knifes seem to be a good fit for her.
The sharper the blade the less likely you are to cut yourself because you are less likely to slip. Maybe she needs to work on her technique.

Having a look at a few videos, on technique, helps. I’ve changed where I put my fingers since I watched a couple of those. In my case I lost a great chunk of skin, from a knuckle, using my big microplane grater. I went out and bought a cut proof glove, after that. I’m also much more careful.

I read "cheap tat" as "cheap tatt" and pictured your relatives forcing you to get a bad tattoo, that you would then maybe slice off with your $2 Target Santoku Knife.
Apart from getting good knives the secret is to look after them.
A) Keep them in a knife block, to avoid hitting the blade against other things.
B) Make sure they are kept sharp but don’t overwork the edge.
C) wash, dry and put away immediately after use. Don’t put in the dishwasher.
