Grilled Fish Charged Extra When Ordering Fish 'n' Chips

Can someone please explain why people charge extra for grilled fish as opposed to battered? Doesn’t it cost more to batter and fry that grill??

    Grilled fish is more labour intensive to cook. Batter costs very little, it is just flour and water basically.

      yep this.
      just chuck the prebattered fish in with the chips into deep fryer with everything else and your done.

      Grilling fish needs bit more attention and space in the kitchen.

    • But the labour cost to a business is the same. It’s not like they are going to hire an extra person to grill fish.

        It takes more time to cook the grilled fish. Eg. the chef can make 10 battered as opposed to 6 grilled fish in a set amount of time because he needs to spend more time and attention grilling.

      • Actually they likely would if everyone purchased grilled fish.

    Take into consideration that the time to spend in front of the grill to cook the food vs dumping the fish into the fry for x mins.

    Or maybe the cost are the same which people are willing to pay extra $ to have the fish grilled.

    It also has something to do with the grilled fish being packaged separately so if you’re doing an order with fried stuff, now you need two lots of packaging instead of one.

    It’s probably mostly a legacy thing from when they first did grilled fish and they charged more because it was different and added additional processes as noted above. It just stuck.

    Kitchen processes are less streamlined
    The fryer is always on, no matter what. With the grill they will have to turn it on, just for you.

    Got it.

    Most places grill for an extra 50c. In my mind I see similarities to credit card surcharges. For such a little amount you’d almost be inclined to build it into the price.

    But I am a simple man 😒

        • A piece of grilled gold band snapper is only $14.50 haha. Probably the saddest thing is that I actually payed that much when I was really after a bit of fish.

  • The crumbed fish comes in a box in bulk and easily cooked in hot oil
    The grilled required more care while cooking too.

    When it is grilled it is very difficult to disguise how small the actual piece of fish is, hence they charge more to give the impression it is a premium product

    First of all, many tend to assume that when ordering grilled fish with a fish and chips order that they are tricking the system and getting better fish from the restaurant menu. Wrong.

    Others think that it's a way to get fresh fish as they assume battered fish is pre-battered. Wrong. All fish is battered just before frying (pre-battered is a supermarket frozen food thing.). It's not that fish and chips fish isn't fresh, it's just not the same fish used for other menu items.

    Others just want a healthier option but don't want to pay more for the better piece of fish on the menu.

    When you order your fish and chips fish grilled, you are getting that same piece of fish grilled rather than battered, and this is why it costs more. It's an annoyance. It's a speed bump. It's a "special" order that generally ties up a fry cook who could be doing batches of fried stuff but now has to step aside to cook and keep and eye on this one stupid piece of stupid fish that is also thinner and can overcook fast and this sets other orders back. Alternatively, the other chefs on grill now have to pay attention to one stupid piece of stupid fish that's not from the restaurant menu and isn't cost effective.

    Edit - I realise this could be in reference to fish and chips shops only too, but it's a similar thing. Grilled is more time consuming as it requires special attention so as not to overcook.

  • Surely it’s swings and round abouts though. When I got to the shop there was like 6 pieces of fish grilling. Not like they had to stop especially…

    The real crime is that they call it grilled. It's actually pan fried (vs deep fried). Still very oily and unhealthy vs. true grilled fish.

  • I have been eating 'greasers' for over half a decade and in all that time I have had grilled fish once,
    battered fish is the best, so why all this talk about grilled fish?

    • Best battered fish I can recall is the batch I did in my little kitchen last year.
      Nothing fancy, just frozen Basa and an internet batter recipe.

      • The one I had was 4 decades ago & it was flake b4 the mercury scare,
        it just had a little oil on the flat grill after the flake was moistened & had a little flour put on it, basic
        That was the last time I had grilled fish :)

      Coeliacs can't have the usual batter or crumbs, and on the whole it is better for you than deep-fried battered fish. Can be dry if not cooked well. Fortunately, I can have battered fish and chips, so not an issue for me.
