The 10 Piece IKASU X® Knife Block set is our largest block set and includes all our favourite shaped blades and sizes allowing you to complete any task in the kitchen with ease. This knife block features clear acrylic windows which not only allows your knife to be stored safely, but also allows the knife blades to be on display in the kitchen. GLOBAL knives are made from CROMOVA 18 stainless steel, specially developed by GLOBAL as it holds a razor-sharp edge and resists rust, stains and corrosion. Ice tempered and hardened to Rockwell C56-58, each knife is carefully weighted for optimum performance and balance.     Great price.
    Probably only use 3 knives of the above with regularity.

    • Bread knife, cooks knife, and paring knife is all you need. Maybe a filleting knife if you cook fish a lot, or a carving knife if you like roasts.

        Nah fees are to high on eBay. Gumtree will be fine and hey they will know I have a knife with me ahead of time so they won’t try to negotiate.

                  @damion: Rust spots are the big one. Wipe clean, dry and store after use.

                  @damion: The pressure from the water makes the knife move and vibrate, encouraging hitting the blade against whatever surface it's resting on or adjacent cutlery.

                  Depending on the brand of dishwasher tablet some contain microabraisives also.

                  @damion: It's the abrasives in the detergent more than the temperature of the water which degrades the edge.

                  @damion: The metal of the knife itself won't warp from being in the dishwasher.
                  Warping is more a problem for knives with wooden or micarta handles, which can swell and split in the dishwasher.

                  Carbon steel knives will rust badly in a dishwasher after a single cycle.

                  Stainless steel knives with a dishwasher safe handle, (e.g. fibrox, swibo, f.dick expert, wusthof pro etc ) are perfectly fine in the dishwasher, though they may dull a little if they're moving around a lot in there, bumping into other knives or ceramics like cups and bowls.

                  For something like the above globals, they'll survive in the dishwasher fine, but considering their value, people tend to be a bit more precious about them therefore opt to hand wash them and wipe them dry*.

                  Note: Stainless steel is rust resistant but not rust proof, prolonged exposure to water will still rust a stainless knife.

            • @[Deactivated]: I had a friend who put hers in the dishwasher and they went rusty. It also means the knife is exactly where it is needed for next time you want it. I use mine for multiple things and it saves contamination between ingredients.

    To many knives for me. I just want the Global Teikoku 4 knife set to get under $200 again.

  • The problem I saw, with the set, was no kitchen scissors. I use mine a lot.

  • How does Global compare with other Japanese brands, such as Shun?

    • They're sharp. Just get a 1000 grit sharpening stone too.

    • overall better value for Global set, Shun Classic is better than Global,damascus looks better but higher price.

      Shun is less often on sell. if you are looking for a set, go for Global.
      If you only need a knife, go for Tojiro DP3 (VG10) to start with. And add Shun into your collection when on sale.

      • I can't agree that the Global set is better value. I have the Global Ikasu set and Shun Classic and Premier sets. As you point out with the rockwell scales above, the hardness and sharpness of the Shun steel is levels ahead of the Global, and whilst this is subjective - the handles look and feel considerably more premium and comfortable in my hand.

        Rather than looking for a large set, I agree that a good Chef and/or Santoku knife are a better investment, alongside less frequently used personal preferences, such as a mid-sized Utility knife and small paring knife.         Tojiro DP3 was always a solid recommendation in the bang for buck category, albeit when it was selling for half the price it does these days. For the price they ask these days, I'd make the small upgrade to a Shun Classic or Premier line to get the lifetime free sharpening, and some seriously good looking knife porn.

      Some apprentices use shun. Some of the knives are decent.

  • Can someone please recommend a sharpener for these knives?

    Someone mentioned getting the right sharpener for the angle of the edge in a previous post but I cannot find it.

      Recommend global 3 stage sharpener if you don't plan to invest whetstones.

      It's only the two stage, but that's ample. If you need the three stage, chances are you're approaching a level of commitment that should invoke investment into a whetstone instead. But the minorsharp is fantastic at maintaining the Global 15 degree cutting angle in a minimal amount of time and with no fuss. Just do it…

          When I gave a knife as a housewarming gift, I included a 10 cent coin. The receiver is supposed to give back the coin, in an act of "paying" for the knife to counter the superstition.

    • I'm pretty sure it's just the block they sit in. I have the synergy set, the knives themselves look identical to every other global knife.

      Depending on your tastes, you could add a decent mid-sized utility knife and/or bread/serrated knife but the three included knives will suit 99% of needs and the knife block adds capacity to grow.

      They were available for $300 during the 30% off kitchenware code a couple months ago, but that was lifetime best pricing. If you could land them anywhere under $400, I reckon you'd find them an infinitely better and more useful purchase.

        • Another downfall of Global, they were bought out by Scanpan years ago and offer no sharpening.

        I have a fairly big Cook's knife to fill that top slot, but wont buy this if it wont fit.

          A lot of men think they have fairly big Cook's, but you'd be amazed how much that slot can stretch to accommodate…

      I would, also, recommend getting a Good pair of kitchen scissors that sit in the knife block. Preferably ones that pull apart so you can clean, and dry, them properly after use.
