  • You'd normally call a knife that big a "utility knife", and they're notorious for not getting used. I don't think a 13cm knife would really be useful for the kind of work you normally do with a paring knife like working with stuff in your hand, peeling, etc…

    If you're in the market for a 13cm utility knife, it's amazing for the price. If you're not sure, you're unlikely to need it.

  • I've wanted a set of the Miyabi Birchwood knives for years, but the price is outrageous.

    I've pulled the trigger on this as a "well done for getting through lockdown" gift to myself. They're stunning and this is a steal. I'll use this to slice tomatoes, cube chicken, anything. Just looks so damn pretty.

    While this knife looks good, one caveat with all "Damascus" blades is that they are clad in a Damascus-like steel; the true recipe has been lost to time.

    If you want a nice looking knife, go with one, sure, but if you want a blade you can pass down to your kids, get a proper Japanese knife with VG-10 steel. The reason I say this is as you sharpen your knife, you will damage the "Damascus" plating and eventually the laminating will start to fail. I say this as someone who has owned a few.

    As for the usefulness of a 13cm pairing/utility knife, well, it depends on how much you like to cook, and how good your knife techniques are. I use my pairing and utility knives almost daily, because an 18cm gyuto doesn't always fit the job.

      Meanwhiel, pattern welded steel (which is what is now called Damascus steel by marketers) is not inherently a cladding, but can be used as one when a softer steel is used for the cutting edge. Knives that use different steel for cladding and core will note that. That said, the cladding is almost always a significant portion of the blade, and is unlikely to be an issue.

      If a damascus pattern rubbed away or was damaged by anything short of a lot of work with a stone, then it was a knife with a printed on or etched on pattern. This is typical of $15 chinese Damascus knives.

      I guess delamination between the core and the cladding could happen, but I've never heard of anyone who uses a sharpening stone correctly experiencing it. Pattern welded clad knives can last a lifetime, and usually will for a home cook if you buy a good one and treat them right.

      • For sure, there are more "genuine" Damascus-like blades out there, but they aren't going to sell for cheap. Good old Bob Kramer does them, but I don't have US$50k to spring on a knife. :D

        Most of the knives that use cladding, like this one, will hide the fact they use cladding with deceptive marketing language like "100 layers" or the like. It's still clad around a hard steel core. Not that clad blades are inherently bad, they just don't do so well when this fake Damascus-like stuff is used. As I said, they have a tendency to delaminate, which shortens the life of the blade.

          Softer, more uniform cutting edges with harder pattern welded cladding are not worse or less expensive. They're harder to manufacture and they are generally regarded as an improvement, giving the strength and corosion resistance from the cladding, but the ease of sharpening and ability to put a finer edge on the core steel. There's a few hundred years of metalurgy that goes into it, and it's a pretty interesting way of designing knives and swords.

      Unfortunately the knife game isn't immune to vanity sales lol. Give me a good, simple, chunk of ginsan any day of the week.

                Those of us that purchased at $59.95 will receive the real product. I can see mine is in transit and it specifically states the Miyabi

    • They had it at $9.99 as a price error yesterday. House had it for $59.99, it wasnt a price error. Once House sold out, the other retailers minimum selling it at $179.

    The steel Miyabi uses here is a bit vague, I have heard it is their own proprietary steel. It could be a variant of VG10, but usually Miyabi label it CrMoVa60 if its VG10.
    It's not SG2 as well. I will have a closer inspection when I get this.

    For those of you guys wondering whether at $60 this is a good buy, the TLDR is:

    If you are willing to spend $60 on a paring knife, this is a good buy.
    Cutting small things and including it in beauty shots for plating? Quite suitable

    Do you need to spend $60 on a paring knife? Questionable. That totally depends what you plan to do with it.

    Peeling fruit in the palm of your hand? Definitely overkill, you can get yourself a Victorinox paring knife for about $7 to do that.

    I personally paid around $60 in japan for Tojiro DP3 15cm utility/petty knife. It pretty much never gets used, in hindsight probably wasnt the wisest purchase.
