They'll honor 1 year, where as if it is Australian Stock they'll honor 2 years under the Australian consumer law.

Series 4, 5, 6 do. Hardware is the same wherever you buy it - ECG is just disabled when you log in with an Australian account. Apparantly there’s a way to enable it.

All apple watch has ECG function.
The restriction is applied on software level.
For AU version, you also can enable it. Just login to an account which has ECG enabled, then sync the health data from icloud to local, then log off. Then login your AU account, done. You can enable ECG on your AU version apple watch.
