UniFi is an excellent choice for home WiFi as they're often used in a lot of business and they're not overly expensive. This is good to add to your existing network to fill the dead spots without costing an arm and a leg.
You can run this standalone via the UniFi app for your computer/mobile/docker, UniFi Cloud Key or UniFi Dream.

It's easy to connect to your router via ethernet and use this to provide wifi. Or do you mean using this as a repeater?

Yes and no.
You can't get it to only show the settings from your RT-AC68U. Though if you set the exact same settings it will work.
Though your best bet would be to turn the wireless of your RT-AC68U and use the Ubiquiti AP and you will get better coverage.
This or mesh wifi systems for normal house hold purpose
this. I have UDM and one of these to put in near front of house because garage doors drop the signal to the driveway.
