There has been quite a few deals on the CPU in the last three months. Lowest was around $650.
I know., tbh I have been holding off because I don't know when my GPU is arriving with PLE computers.
Thought it might be better to wait for Black Friday, hopefully, the 5900x will be sub 600. I might just build my PC and use my old GTX 970
I built a full system with a 3080 in January this year with a 5900x but my plans changed and was hardly using it so I sold it. But I'm thinking of building another too. Hoping you are right about the sub $600 price.

@Enixon: I was going to do some gaming and video/music. But my job changed and I didn't have much time for any of it. It was definitely the best system I've ever built or had. Saved so much time. Didn't have to wait for anything. Very snappy.
I love building computers so probably partly that's driving me to build another. I should really be buying a decent Lenovo 3060 laptop and a separate monitor for productivity. But I miss that incredible buttery smooth workstation lol
@[Deactivated]: Fair enough, once you have had a desktop it's hard to go back to a laptop. Yep, you're right snappy and buttery smooth you can't get that on a laptop.
I'm would love to rebuild another PC, it's been a while since I've built one. Always fun building a high-end PC, can't forget the custom cable sleeve for the extra asthestics

Planning for a build for 1080p may be 2k video editing and some docker VMs. Will also use it 1440p gaming (if I get a 3070) Should I go for this or wait for a ~$600+ 5900x?

I have realised for the gaming that I do. 5600x should suffice, I am wondering extra $150-200 (5900x) is worth it as opposed to 5800x for productivity needs and future proofing.
