The massive range in rockwell hardness doesn't give confidence.

I'd recommend 20cm-23cm for most people..
25-30cm blade length is starting to get a little long

    I ended up getting:
Messermeister 72442 Four Seasons Santoku Knife, 18cm, Black https://www.amazon.com.au/dp/B002KKC2NQ/ref=cm_sw_r_cp_api_g…

I had been waiting for the victorinox to go on sale but couldn’t resist at ATL of $28.47

    • Please let us know how you go in future OzB knife posts! Curious about its performance

First impressions, honestly the handle moulding could be tidier (victorinox Fibrox better in this regard). Definitely a more hefty knife and you get that “thick knife resistance” when cutting through carrots and the like. I bought this one mainly for pumpkin which sticks to the blade and requires a sturdier knife. Will report back when I’ve had a chance to use it more.

        • Thanks for following up, will be eager for your feedback after more use :)

    • Wish I could use Santoku's, I have years of ingrained rocking motion.. 🤣

    • Thanks I also got this with your comments
