      If you enjoy streaks of fat in your jerky then it's good. I haven't tried the limited flavours with the wagyu but have for the regular biltong. Smokey BBQ is my favourite.

  Have been buying your biltong for years and the family loves it. I'm going to have a go at making my own and will start with one of your spice mixes, which would you recommend for my first time? Could you please also recommend which cut of beef to try?

    The 2 most popular biltong-making spices are:

    • Freddy Hirsch Original Biltong
    • Crown National - Biltong Seasoning - Safari - 200g
    • ..which is also available in a bigger size: Crown National - Spice Mix - Safari Biltong - 1kg bag small

    (Note that we don't use these spices ourselves; we just sell them. We use our own spice formula for the biltong we sell)

    We use topside. You can use almost any cut but more tender is better and you should avoid cuts with too much interconnective tissue / grissle.
    Suggested cuts are silverside, topside, outside, eye round, fillet, sirloin, straganoff (if making snapsticks), etc.
