    My chef mates begged me to use a whetstone and not something like this a while ago. They got me to buy this whetstone and told me to watch this YouTube video. Honestly after trying it a couple times you get the hang of it and is very therapeutic.

    • you need to be really steady for that small back and forward motion on the stone. since I ain't no pro I prefer the 1 straight pass that gets the whole edge in 1 swipe (my passes go from base to tip whilst the video demonstrates tip to base)

    What’s good for sharpening serated knives? Apparently you need a specialised tool?

  • My input is if you want sharp knives, get something like this Shapton (https://www.amazon.com.au/Shapton-Professional-1000-Sharpeni…) whetstone (naniwa chosera are great too but pricier) and learn how to use it, it will last you a lifetime. It is relatively cheap and you won't need new knives for a long time or not at all if decent quality.

    If you don't want to sharpen, pay someone $15 a year and it will last a while and be much sharper than any pull-through sharpeners can ever get.

    Source: I've sharpened many many knives on everything from pull throughs, hones, strops, diamond, whetstones, fixed systems etc.

      YT says 1k to sharpen. Between 8-6 k to Polish (10 minutes ish).

        $66 is cheap for Shapton, worth it's own deal in fact.

        Jumping from 1K to 6K will be hard work. I have a few Shaptons and rarely go higher than 1K for kitchen knives anymore.

        A decent quality 1k will fix most issues with your knives and set the bevel if it doesn't have massive chips or issues that's why most start at that grit, I ended up getting an atoma diamond plate 140grit as I was repairing a lot, but it isn't necessary if you are new to get the entire range of grits.

        After the 1k it can be quite sharp still if you have good technique, however, a ~3k stone would be my suggestion to get it nice and sharp as a finishing stone. Anything past that is honestly not needed for a kitchen knife to be very sharp EXCEPT for something like a strop to deburr the edge (look up deburring on TY). I would highly recommend the naniwa chosera 3k (Amazon), best stone I've used as it cuts quick but sharpens fantastically. Also the shapton stones are good too, either the cheaper ones I linked above or the glass ones.

        This is honestly a good place to start, for $150 that's a very good price for the shapton stones imo and a 1k and 5k will do the trick.

  • no one's mentioned this one yet, but if you have an assortment of knives you value and don't quite trust your coordination using a whetstone, a Spyderco Sharpmaker will get the job done. be warned: they aren't cheap!

    it looks bizarre but once you learn how to use it, it's very satisfying to use. i've even managed to restore a few tanto blades which notoriously annoying to sharpen

    Absolutely shameless and unsubstanciated nonsense. These are absolute junk - better than nothing but IMHO likely to ruin your knive's more often than improve them.

    I nnever cease to be amazed that folks fall over themselves to spend oodles on impressive looking/spec'd knives and yet hesitate to learn the incredibly simple and low cost practices for honing and resharpening their knives. And if you hone properly between uses you will need to resharpen VERY rarely - assuming you're doing other basic stuff like not cutting on improper surfaces, cutting bones with unsuitable knives etc.

  • It's all relative, a cheap ass sharpener will get you a knife that cuts, as a serrated edge is usually created.
    It's all about price!

    A world's best sharpener can cost thousands, but achieve incredible results and rebuild a chipped edge etc. with ease.

    This would be my choice, to pay a professional to "hand sharpen" my expensive knives using a Wicked Edge, at around $10-15 being the norm.
    Unfortunately some pro sharpener's like to use a powered system and unnecessarily remove more metal than needed, speed being the decider.

    A knife collector would buy a Wicked Edge without an issue as some knives can cost up to a $1,000 and a polished edge is the ultimate goal.
    Of course the market is much bigger in the US.

    Bought years ago, although many accessories added since, I could start a knife sharpening business using this today.
    But you would need to mortgage your house to buy one. ;)

    And here I am still using a $1 steak knife I bought over 20 years ago as my main food prep knife.
    It’s serrated and still cuts just as well as the day I bought it.
    Has never been sharpened.

      You fool, you could've easily gotten a free set of steak knives with almost any purchase 20 years ago.

  • As many commenters have observed this device just shreds the edge of the blade. I threw out some old “sharpeners” we had like this because they ruined blades.

    I like the look, but trigonometry in my head suggests the angles would be different at the ends of the knife. So, 12.5 degrees in the middle and more acute at the tip of the knife and the stock????

          Yep, have a similar one and would recommend it to anyone who can't be bothered learning stones. Really easy to get a consistent edge.

          I still use mine to bring back really out of shape edges.

          Need to get some diamond plates (only a few $$ each), the supplied stones are rubbish.
