I have nicer headsets but they don't play well with my PS5 (Bose in particular doesn't like open mic settings for some reason)

Yes 3.5mm to usbc converters work. Just be aware that the quality of the converter DAC makes a difference to the quality of the mic and sound. E.G buying a cheap $8 unknown brand one will result in bad mic quality and sound.
What do you suggest? Just the official Apple/Android Phone brand ones?
I use just Ugreen brand. They are decent. Funnily enough they are on special now for $13.58. Usually like $18

There are more expensive ones, I just haven't tried them. But these Ugreen ones are definitely better than cheaper brands in my opinion.
@BLAIL: If using a pc and direct 3.5mm then it's definitely loud, and can be boosted even more.
I think it really depends on those reviewers and which connection they're using with which device.
