      Pretty sure that refers to the ones with additives/preservatives.

      Jerky is literally dried meat. You can easily make your own.

      The problem with the proposition that red meat increases the risk of bowel cancer requires some nuance.

      From the outset, we emphasise that we are proudly preservative-free, especially when it comes to nitrites and nitrates.
      From the outset, you'll also notice that the WHO / cancer council does not say "never eat red meat"; it specifically says to eliminate the preservative-containing processed meats such as ham, bacon, salami and frankfurts, and to try reduce – but not eliminate – other red meat; it says that more than a certain amount of red meat per week increases the risk factor, and that risk factor is indeed based on studies of preservative-containing processed red meat.

      The research has shown for a few years now that the use of the preservatives – nitrites and nitrates – in processed meats – which are also naturally occurring in certain foods such as spinach, celery, and beets – have been linked to an increased risk of bowel cancer – although it must be noted that cancer is generally multi-factorial: not all smokers develop lung-cancer, and not all consumers of nitrates and nitrates will develop bowel cancer.

      A problem with the study is therefore the correlation:
      the study did not look at bowel cancer rates of consumers of red meat who did not eat preservative-containing processed meats.
      Nor does the study conclude that consumers should eliminate red meat – it only says to eliminate the preservative-containing red meats.

      It must be noted that our ancestors have been eating red meat for thousands of years, and that many mammals consume red meat on a regular basis. However, our ancestors did not use nitrites and nitrates to preserve their meats.

    I never said there was anything wrong with eating red meat. I said I, not people should, stop eating Jerky, preserved red meat, as it has been shown to be carcinogenic. The salt (NaCl) is your specific preservative, I can only assume from the ingredients there’s no other salts Nitrates or otherwise. No offence, but I’m not gonna take medical advice from Geronimo Jerky.
