Because All Stars Collection was a limited re-release that you can no longer buy and instead must now pay a subscription for if you missed out.

Buy one of the ~$120 SFF PCs that get posted here all the time, install Dolphin and play any GameCube game you want without a subscription.
Screw Nintendo and their nickel and diming consumers.
If you want to play GCN games, you're probably better off with a $20 Wii than a SFF PC.
If you can handle the 480p and analog video output.
