  • Do these oil have before before dates?

    • +3

      Yes, but only after after.

    • I just purchased a few bottles and they told me current batch is may-jun 2015

  • +1

There seems to be little information on the product, is it white truffle or black truffle oil?

  • +6

Is this real truffle-infused oil, or is it made with 2,4-Dithiapentane? There are too many claims on the Internet suggesting that most truffle oil is synthetic. Can anyone who has used it please clarify?

    • My old housemate had this. You can see truffle shavings in the bottom of the bottle, so I'd say it's genuine.

      • You're a gem, thanks for that :)

      • +2

most of the time they use both, including a little bit of truffle to mask the fact they're using synthetic…so the presence of shavings is inconclusive.

you'd have to check the ingredients to be sure.

      • +1

Almost ALL "truffle-infused" products will be flavoured with synthetic odors, labelled as deceptively as possible and will have a few little flecks of black summer truffle added to give the impression that it's natural. This practice is so common that you can almost assume this will be the case until you either find unambiguous labelling or personally contact the company and find out that they don't use any flavouring other than actual truffles.

The one category of truffle-flavoured product that seems to do better is butter.. there do seem to be truffle flavoured butters out there that have nothing but butter and truffles in them.

An hour ago I sent an email to them asking very specifically. I chose email over phone to have the answer in writing. If I get a reply I will share the information here.

Right now I am not very hopeful - they seem quite good at marketing their products and should not have missed this opportunity to set themselves apart from the crowd with a clear statement on their website.

        • Because of the OP and subsequent alerts to use of the chemical 2,4-D.. I became interested and googled to find this:

          http://www.seriouseats.com/2011/04/rant-enough-with-the-truf…

…the problem is that most of the subtle aromas in truffles are not fat soluble, so even when made with real truffles, as companies like, say, Urbani do, the bulk of what you're extracting is still just 2,4-Dithiapentane. So with those, you're basically paying a premium price for the exact same product, just as "natural flavorings" are more expensive than "artificial flavoring," despite being chemically identical.

Because of this I'm even skeptical now of any other "truffle" flavoured product lol. I was like thinking to try the salt, but………… I don't want to pay for fake truffle salt.

        • With their salt you are on the safe side. It contains real truffle pieces, not just aromas.

Quoting their description: "Truffle salt is the ultimate way to enjoy truffles. This blend of ground black truffle and sea salt is irresistible in the kitchen."

Similar for the mushroom & truffle tapenade, which really is a winner.

If my memory serves me right those two products contain about 1% truffle.

        • Unfortunately the seriouseats article got it wrong (excellent food website by the way - especially the "foodlab" articles). Every truffle salt I've seen or smelled has had the artificial flavouring in it. It is often written as "aroma" or "odour" in the ingredients. Sometimes it's intentionally put close to "truffle" on the list of ingredients to make things more confusing. "Truffle (6%) aroma" for example. The truffle pieces for the most part are there for cosmetic purposes. Even the examples that Kenji linked in the comments of that seriouseats article contain "aroma". Some of them don't include it in the amazon listing so you have to look for a picture of the actual jar.

The only products I have heard of so far that contain only real truffles and definitively state that they do not use additional flavourings are a few truffle butters (including myrtleford) and a truffle oil from Oregon (article here: http://zesterdaily.com/cooking/truffle-oil-controversy/)

Thanks for posting this, I am very interested, had other truffle products from those guys and loved them - try the Mushroom & Truffle Tapenade!.

I wonder if you could answer a question, assuming you have a bottle to check the label: do they make their truffle oil with real truffles or - (like almost all other truffle oils), is this just oil with added chemicals?

If you could post the ingredients list from the label that would be great!

My bottle says olive oil, truffle aroma, black truffle.

I have been using this stuff for a few years now and didnt know how good I had it until I purchased a more expensive French import!!!

This stuff is miles better :)) I totally stocked up on this discount hehe

OK, got a reply to my enquiry. Quick and professional, but unfortunately the expected answer:

"Our truffle oil is made with a synthetic aroma. Unfortunately truffle is not oil soluble and therefore it is near impossible to produce a genuine truffle oil, and certainly not commercially viable.

I am not aware of anybody who claims to produce a genuine oil, and would be very sceptical of anyone who says that they do.

The aroma based oil is not for everybody – most people love it, including some very great chefs, and some despise it.

It does however do a good job of getting close to the truffle experience at a very affordable price."

    • Thanks for sharing the reply that you got from them. I tried their Facebook page but haven't received a response. I got a bottle on the website anyway, haven't cooked with truffle oil before and will give it a go.

Hey, geoffardy. You don't really cook with it, as much as use it to 'finish' the dish. Cooking with it, can mask some of the truffle smell. I can't vouch for this brand (although I have bought actual truffles from them before) as their lack of replies, probably means they use a mixture of fresh and synthetic. Real truffle funnily enough when mixed with olive oil, usually smells only veeery faintly of truffles.

Regardless since you already got it, try drizzling it on food after cooking. I think you'll enjoy it.

EDIT: Sorry, just read the reply from team teri- yes it's a mix.

        • ^ yeah, definitely don't COOK with truffle oil! it's a finishing oil, for drizzling over things (use it like you would a good olive oil).

Synthetic or not, it tastes great along with a bit of their truffle salt with bread! my culinary skills just aint good enough for me to shave the real stuff into it unfortunately ;) So this will just have to do.

    • As per my post above, according to this article at least: http://zesterdaily.com/cooking/truffle-oil-controversy/ oregon truffle oil (http://www.oregontruffleoil.com/) appears to be the real deal. The other option is to finish your risotto with myrtleford truffle butter instead of oil (http://www.thebutterfactory.com.au/black-truffle-butter/). They're usually at the farmers' markets, so you can ask them directly whether they use synthetic aromas.

  • The synthetic chemical has been subject to ongoing studies as to whether or not it is a carcinogenic. This product is the culinary end point in Baudrillards simulcrum.

    • Slightly ironic that I'm so active in this thread, non?

  • Shipping is a killer huh. Anyone in Sydney interested?

    • i am interested! =D

      • You are not accepting new conversation mate. PM me.
