    • Saffron has historically and continues to be one of the most expensive products by weight. It's literally made by a farmer planting and irrigating a bunch of low yield plants. That produce a small amount of crocus flowers once a year, then someone walking around a field and hand plucking stamens out of each flower and sun-drying them.

High input cost, Low yield, labour intensive - it's pretty much the definition of high priced goods. It's the same reason white truffles or beluga caviar or foie gras are expensive.. It's a niche market and the product is a pain in the arse to bring to the market at a large scale. So the price stays high and it remains a luxury product. The same applies to illegal substances like cocaine ($300 per gram, I am told).

If you bought something that someone claimed was saffron, truffles, sturgeon caviar or cocaine for $15 a kilo.. I'd be the one selling you magic beans.
