Here is a medium and fine whetstone ideal for japanese steel knives. It also comes with a nagura stone which can maintain the whetstone by lapping (flattening) uneven areas.

This whetstone scored 4.5/5 stars on amazon from 91 reviews, though on the forums it apparently can dish (wear) quickly and will need to be sanded or lapped.

This is reknowned as the best bang for your buck chef's knife under $100.

I was looking at how to maintain the edge and determined that whetstone/waterstones are the way to go for the hard japanse steel as honing steels tend to chip them.

1000 grit is for sharpening and 6000 grit will hone the edge

      Very much so, Global are 58 on the rockwell hardness scale, my tojiro is 60. They are both japanse steel so it would be more or less ideal.
      You woulnd't want to use anything except these or a cermaic honing rod as far as I'm aware

    Don't use a nagura for flattening unless you really know what you're doing. I would never consider trying it with my skill level and I would imagine that anyone getting stone maintenance advice from OzBargain is not ready :)

    For the rest of us plebs who haven't studied under Hatori Hanzo, the lapping surface needs to be dead flat and larger than your stone. There are cheaper ghetto methods out there but something like a 600 grit Atoma Diamond Plate will keep all of your whetstones flat for years for around $100.

    The nagura won't go to waste, they're great for creating a slurry on finer stones

    • Whats the slurry used for OzBragain? Just to aid in sharpening?
      Would they not make the stone dish way faster?

      • Finer stones like the 6K here are more for removing scratches (polishing) and refining the edge. As far as my limited knowledge goes, the slurry kind of acts like a polishing compound on your edge.

    You can buy a 1000 king stone for about $40 on eBay, 6000 is a bit of an overkill, 1000/3000 would be best. The 6000 you will be stropping for a long time
