    If you're looking at getting knives, IMO you're better off heading to a good industry shop / wholesaler (Ecotel in Adelaide was my go to, not sure of equivalents elsewhere). You don't need 7 knives - get one good chef's knife, maybe a paring knife too. If you're hardcore get a bread knife but I never bothered.

    You'll get great knives for better prices than these. I bought a quality chef's knife for about $70 around 7 years ago and it's still going strong, sharp as ever with a bit of maintenance and I like it better than any global knife I've used.

      I prefer to buy a single santoku, keeping your knife sharp is much more important than buying an expensive one and never sharpening.

      Wow, $70 is very cheap for a quality chef knife. I am a fan of the Wusthof classic range but they are not cheap. Loving the free sharpening service in Aus tho.

          Thanks I sent it to my friend last night. This morning I got a message that he took a sharpening course years ago when he worked for a poultry shop so in the end he could do it himself. Still good to know. Thanks for the effort!

    • agreed. i'm more happy with my victorinox chefs knife and collection of kiwi brand knives that global knives.

  • Bought recently a set of Global knives. Whilst they are sharp, overall I'm disappointed about them. They feel too light for my liking and they are not truly stainless. Blades get stained by food.

  • Does the Baccarat iD3 Mini 2 Step Knife Sharpener 9cm work well on the Global Ikasu knives? Or would you recommend another knife sharpener?

      The Globals are factory sharpened at between 10 to 15 degrees (traditional is around 11.5 degrees FWIW). I think the Baccarat ID3 knives are similar to the Global so it might be ok, but I can't see anything anywhere as to what angle that sharpener is set to…. it's quite possible that the Baccarat knives use Japanese steel but are sharpened to a much less acute angle…. and I have to say the photo looks like the edge is much wider. It's free, so whatever - but I'd be cautious unless someone else has more info on it. Or if you get it, try the sharpener on an old knife to see what happens.

      I have some Global knives and have a Global water/ceramic sharpener. Works a treat.

  • I have had this knife set for roughly 5 years, its Ok they may have some some small upgrade but looks almost identical. Overall the knives are pretty good but uncomfortable to use for any period. My second realisation was that knife blocks are awful.

    Go to a decent place and buy individually, different brands do different knives better and its much better value than any knife block. Amazon is good for buying knives to. You basically only need 3-4 different styles of knives and you can buy the best of each for less than this price.

          High grit sharpening stones. You can often find them with low grit (200-800) on one side and then medium grit on the other (800-1500) or as a pair.

          I prefer natural stone but they're rare and expensive so will happily settle for ceramic stones.

          European knives tend to be thicker and you angle them between 15-20 degrees depending on the knife.

          Japanese knives can go down to between 10-15 degrees (except for the thicker vegetable knives).

          Technique depends on if you have a V edge or a single edge.

          Edit: If you're after convenience, get one of those ceramic roller sharpeners. Sure they're not the best but they'll get the job done for most people, costs a fraction of getting a bunch of sharpening stones and saves you a lot of time.

        • If your lazy and want the crazy sharp knives with out ruining them then this specific electric one and a honing steal. But you really need to love knives.

    I've used a wide range of knives (Wusthof, Global, Baccarat and independent smiths) in both carbon steel and stainless steel in professional and private kitchens. I think the value of the knives really depends on the end user. If you can't or won't sharpen your own knives then Wusthof is a great option when you take up the free sharpening service. In professional use, I find that Global knives dull slower than Wusthof (Baccarat being the fastest to dull from my experience).

    Personally, I like the Global knives for the low maintenance and would recommend them to most people. As mentioned before, they are pretty light so it might take some getting used to if you change from a heavier knife. I've never had mine stained by food so I don't really know what you'd have to do to get them that way. I've only had mine for 12 years though.

    I also think that most people only really need a 20-25cm cook's knife so most sets aren't worth that much to the average person. If you like thick toast then maybe a bread knife.

    Disclaimer: I am Japanese and worked in kitchens in Japan where they are pretty anal about how you look after your knives. If you really want a good value knife, you can buy a carbon steel knife from Japan for about $30-100 depending on the smith. They're a little high maintenance but if you're ever around Osaka, they're a good buy that will last you at least one generation.

  • I would highly recommend Shun knives. Especially the Classic range. Also don't like Global knives knowing that they're not one piece of complete steel - blade and handle are welded together once sand is added to the handle unlike most knives.

  • Got a set of these as a gift about 4 years ago, very happy with them. Keeps a sharp edge for ages, but I make sure I use the steele after every use and always cut on wood chopping boards. Bought a Minosharp sharpener last year to give them a touch up!

  • I've been wanting a set of Global Ikasu for nearly a decade and this is a great deal. After reading some comments here, I Had a look at the shun range and some online reviews and they seem to be quite good too.

    Anyone have any thoughts on the shun classic set? It is about $130 more than the ikasu at 400ish after discount.

    I never bought the ikasu set because i missed out on it when it was $220ish and I've been waiting for the same price since :p
