A store that specialises in gingerbread men/houses… But without any traditional gingerbread men recipes. All vegan. No chocolate, no butter, no milk or eggs in the icing. Oh but with everyone's favourite ingredient added, soy..
You don't even have COLOURS, which is kind of mind boggling because Christmas is associated with the colours red and green.
What a niche of a niche! But as long as you're not in the red and you're not reliant on the income, I guess there's no need to stop. It seems like you guys would be better off as a vegan-hippy bakery that sells gingerbread men amongst other stuff, and not a gingerbread bakery that only sells vegan hippy gingerbread stuff.

OP: Will they have lesser eating qualities (tougher texture?) being so short dated?
All our products have a note on the packaging mentioning that we use compostable film. (for environmental reasons). This breathes a little and as such the moisture content of our cookie can vary slightly. Eg in warmer humid temps they can be softer and in cooler drier temps they can be harder. This is independent of shelf life. What does change a little is the spiciness - We notice that as the Best Before date gets closer the gingeriness can be less. Hope this is helpful.
