          Maybe you should familiarise yourself with the different processes that can be used to dry meat.

          Warm, dry air of a low humidity of about 30 percent and relatively small temperature differences between day and night are optimal conditions for meat drying.

      you need to age it as. a large piece, and then later trim off the dried crusty bits …. not suited for ageimg if you only have a single steak …..you would do whole scotch on the bone, and then later cut it away for the bone after it has been aged.

      Look up GugaFoods / SousVideEverything on YouTube. He teaches how to dry age using something called an umai bag. Simple process.

      I'm guessing @ $79.66 per kilo they aren't selling a lot of meat.
      And the 'sale price' of $39.83 per kilo doesn't sound all that special either.

      Buuuuuuuuttt, @ $11.75 per kilo it almost sounds cheap! Except of course it's not that at all ;).

      I bet they get a lot of people buying on this mistake, hence why they advertise the steaks as "each" like this.
      Grab that impulse buyer at 11pm surfing the net :).

      Funnily enough its always these 'direct to your home' meat suppliers that advertise steaks like this. Never at a butcher, never at the market.

    Dry ageing is a time consuming process that takes controlled conditions and additional work for the butcher, which is one of the reasons why it's more expensive. Another is the fact that dry ageing reduces the mass of the same amount of meat; it's also the reason why you'll often find that your bargain steak goes from being seared in a hot pan to being poached from all the water it releases, that it's been filled with to increase its weight and hence profits.
