      Big cafe in Melbourne - Google has 2122 reviews, 4.3 stars.

    • One of the first “third wave” coffee places as they were called then. The owner is a bit of a world pioneer in specialty coffee.. founded sensory lab roasters as well. Some of their beans are very good. This one wasn’t to my liking a bit over roasted for my taste but I think that’s what they’re going for.

        St Ali’s original founder, Mark Dundon, was very much a coffee and cafe pioneer.

        Malatesta - the current owner - is first and foremost a business man. Nothing necessarily wrong with that, but I don’t think he’s that much of a coffee specialist himself.

          • @chonkie: Yeah? I had no idea.. his name gets thrown around a lot in relation to specialty coffee and cafes. I remember he ran the sushi/coffee joint at melbourne uni when i was a student there (I think he himself might have been in his final year when I started) and later sold it and made a packet.

    Can't tell if freshly roasted or not

    • Usually next day roasting . Not sure about this one, but I wouldn’t worry about it at all. Leading coffee brand at least in Melbourne. The only thing is this deal is not as good as previous proud Mary or Cartel beans.

      every time i've bought from them the roast date has been within a few days of purchase

    I originally thought it was 4kg total for $55 which would constitute a deal.

    Problem is the deal really isn't any cheaper than buying the 1kg coffee p/month and Moccamaster Classic (rrp $420-450), with the exception that you're getting everything delivered.

    I would LOVE if there was a true deep discount on this unit (first preference) or subscription service. Any coupons or suggestions appreciated.

  • Any views on freezing some of this? My previous research suggested this was heretical. Is this still the case - any other viewpoints or longer-ish storage options?

      I freeze and don't notice a difference. JH's youtube videos is what tipped me over the edge in giving freezing a shot: https://www.youtube.com/watch?v=5uT5_IWWb00

      Usually I freeze in 250-500g portions, resealable airtight bags. Defrost the day before use and then use the bag over the course of 1-1.5 weeks. Works for me and given all these awesome coffee deals recently, I've got a nice variety of different blends/single origins stored away.

      basic chemistry would tell you lower temp means slower oxidisation and longer for volatile oils to evaporate …..just need to make sure it’s air tight container and as little air as possible in container.
