Hi there, for the SOMI Tonkotsu Gara, it would be closest to these instructions:

For Karaage, you can do either but we recommend lightly microwaving it first to seal in juices then flash fry it generously in oil to lock in the umami. (or just regular fry for the crispy and crunchy outside)
