hardly seen any under $1 for a bunch veggie these days

Indeed. I do this often enough, first coating with a mixture of spices or a very light batter.

Cauli has too long been a side but is in fact a great main meal. Whole head baked, nuggets / florets breaded and fried, minced and used in tacos, sliced into steaks, so many ways. Just marinade or otherwise add some extra flavour.
