  I've never seen my MIL used ground ginger. She used fresh ginger for all her stir-fry or any dishes.

    Yeah, I've not known and family member / the missus ever buy or use ground ginger for stir fry…or any Chinese dish. Can't comment on the drinks or Indian cuisine tho.
