Hi all,

The MCD5000 range from Miyabi which uses SG2 steel is on sale at Amazon. The steel is one of the best available. Yes, these knives are expensive in general but for SG2 knives + aesthetics (if you're into it), it's pretty cheap.

Shotoh Paring Knife 9cm $129

Bread Knife $229.50

According to camelcamelcamel this is the cheapest both of these knives have been so it's an All-time low.

Yes, you can get sharper hi-carbon knives and what not but these are for those that don't want too much maintenance and decent warranty :).

    Really, how much maintenance does a bread knife need - with or without the aesthetics?

    • You cant really sharpen a bread knife, but its not like it will lose its edge for a long time (if ever).
      Honestly $230 for a bread knife is stupid, a $45 victorinox will be even better (because of the handles material.

        You can sharpen them with a ceramic honing rod and a sharpening stone. But true they take a while to lose the edge if you are using it properly on a wood board. the victorinox is great, as is any cheapo bread knife from a kitchen supply store.

    In the steel comment, at thy top end of steels, there isn't really a "best", at a super simple level, there is a "no right answer" trade off of hardness/edge retention and how easy it is to sharpen. Zpd/vg10/sg2/gs3/cpm types/euro steels/etc. are all great, you just need to figure out what you want.

    Sg2 is typically around the hrc64 level which is fairly hard, so will hold an edge well but be fairly slow/hard to sharpen. Good if you get someone to sharpen your knives for you!

    • Yeah agreed and it depends on your use case as it can be quite a personal thing. TBH was just excited that there was a pairing knife that matched my requirements and posted last night.

    thks bought the shotoh…..have some other 5000mcd already ….break knife is tempting but already own fdick and victorinox bread knife.

    would be nice to see the 5000mcd67 on special or generally available , only own one in that range ( via amazon) and have never seen them on sale in retail outlets in australia.

    • Yeah it's rare to see them on sale in Australia and there's probably not a large market here for it either. I've got the Shotoh too and hoping it arrives shortly. Been living off just one Gyuto (chef) knife for the past 5 years and be nice to have something for finer work.

      Not sure how well marketed this specialty shop is but I was originally planning to grab something from https://protooling.com.au/ until I saw this deal. They've got some pretty cool gear.

      Had one before, good knife until my wife dropped it and it broke into pieces.

    Never use our bread cutting knives. If your chef knifes are sharp they will cut through loaves/breads etc no problem.
