    What's your opinion on placing these beans in the freezer?

      I usually buy 2 × 1kg and put one in the freezer. I always allow the frozen beans to come up to room temperature before opening the bag.
      I can't tell the difference between the frozen beans and the fresh.

    • Just tape over the air vent

    • Beans in freezer will become cold. :-)

      But seriously…

      I store mine in pressurised containers at room temperature. I purge with CO2, then store under CO2 at around 200-250kPa in a cool, dark place. This prevents moisture absorption, UV damage, oxidisation and degassing. Each container is about 3-4 days worth of beans.

    Hey Dan just had one more question do airjo plan on selling sample / selection packs with multiple smaller bags of different blends so we can try them < 500g at a time ?

  • Anyone with a Barrista Pro help me with their settings using these beans? Very new to all of it and honestly quite overwhelmed with the amount of settings haha

      As per roaster previous comment: Need to change grind setting (finer or coarser) till you achieve the following: We would recommend to aim for a 1:2 ratio on a double shot for a 25ish second extraction. He clarified that 25s measured from first drop excluding pre-infusion.
      1:2 is weight of coffee beans to weight of liquid coffee.
      This is a starting point then you can tweak to your taste.
      Adjust grind time to have ~18gm in basket.

      • Thanks for that! I was in a bit of a rush this morning but i did a quick weigh of the extraction and it was roughly the same as the grind weigh. Does this mean i tamped it too hard or i need to adjust the grind? Do i do finer or coarser?

        • That means you have 1:1 ratio, guess in the 30s default setting?
          If so, you need to grind coarser to get more liquid out. Was it dripping very little? how was the crema?

          • @huntabargain: Yeah it took about 8s (inc infusion) to get going and it was dripping out of one nozzle before it started coming out the side. There was crema, not sure how to describe it, prob 50:50 crema to shot

              @No Child Support: For me I like to keep it simple, 1:2 ratio in 30s total time (when you click the button) for double shot. I am not sure if your default double shot in the Breville Pro is set for 30s? If you achieve that then you should have optimum extraction. Crema sound good (must be fresh beans). If coffee start coming out from one nozzle for some time before coming out the second nozzle, it means you need to give attention to your tamping to make sure it is constant and levelled & also to ensure no crack occur in the coffee puck.

  • I've been enjoying Sumatra Blend but it's on the upper limit of how dark I like my roasts. Do you have/plan on introducing any lighter roasts?

  • That has to be the fastest I've ever received coffee. At first I thought you must be bullshitting about yesterday's roast date.

    But sent 2pm that day from Qld, I received it in regional NSW (but nowhere near Qld border) today at midday.

    Even Amazon can't get me things overnight. Well done!

  • Strangely, the Sumatra curdles my soy milk. Is this a known feature of this AIRJO blend?

    I've been brewing espresso topped with steamed soy milk for years and this has never happened before.

    The Sumatra caffeine level is noticeably high, as advertised on the pack, but otherwise I think it's overall a bit overhyped on OzB.

    • I have not tried this beans yet , but I thought if milk got curdled, it means you over heated / steamed the milk? Normally, Soy "juice" curdle faster than dairy milk..

      • 60°C shouldn’t be in the too hot category. It’s not a big deal but It is curious.

        • I only steam dairy milk. A google on steaming Soy, reveal the following:

          You should steam soy milk at 55-60 degrees celsius—anything hotter risks destroying the protein and throwing the acids all out of whack. Another tip is to prevent your soy milk from being exposed to excess air to ensure that the texture remains silky.

          Edit: top mistakes baristas are making when it comes to using soy milk:
          * Not shaking the carton
          * Using the wrong soy milk for their coffee beans
          * Over-heating the milk: ‘I’ve seen some baristas over-heat soy milk, which can cause it to curdle

  • Tried 55°C milk, tried ridiculously cool espresso, still curdled.

    I'd already Googled the general issue of coffee curdling soy milk so I'm interested specifically if other users of this blend have had it curdle their soy milk. I don't recall any other bean doing this.

    • Good luck and hopefully someone who came across this can help you. I heard that Bonsoy or Milklab are the best options for Soy to use with coffee and remember to shake the cartoon before using.

      It's to do with acidity of the coffee, there are low acidity coffees specifically for soy milk.

      Generally doesn't really matter if you stir a bit, but if you are into latte art soy milk is harder, and can be challenging even for professional baristas using commercial machines with specialised milk.

    • I have noticed this from Airjo in the past as well. Other suppliers tend to provide slightly over the 1KG mark whereas these guys seem to err on just under 1KG

      • are they trying to keep the beans and package to total 1.0kg as aust post might charge certain amount up to 1kg? I came across another roaster in the past where they advertise their beans on package are 970gm.

        • When it says 1kg I expect to get 1kg of beans not 930g of beans and 70g of packaging.

          I have two 250g and they both weighs more the 250g including packaging.

          • @ca6leguy: Are you speculating or it happened to you and you actually checked the weight of your beans? If so raise it with them directly.
