          In general, their knives (Baccarat) are terrible. But these ones are Global which are a well respected brand.

    The post above was from some apparently "ghost" account, lightly bashing these knives, but didn't try and sell/recommend another brand. Any clue what's up with that?

    I always find it curious what subtle influence others try and have on the internet, and for what reasons…

      I am a chef. I had several Global knives. Grip is not that good, if you have big hands. Easily sharpened, nice cut but price too high. Good for interior.

        I'm not a chef and have no qualification other than owning a set of Global knives, but do tend to agree.
        I don't find the balance or grip very comfortable and prefer the design and balance of EU style knives instead.
        However the Global's are sharp, easy to keep sharp and they work fine - plus at home it's not like you hold a knife for that long anyway.

          Chef here. Global are Japanese knives. Japanese knives generally don't have good grip as they are not designed to hold the handle like you would with a German made knife. Instead you rest the handle on the palm of your hand and hold the top of the blade.

          I tend to recommend German made knives for general use (Wusthof for expensive, Victorinox for good value), but if you are set on a Japanese knife then Global are good. They are cheaper than most Japanese knives but still work well.

            @GunnerMcDagget: Former chef here too. Agree with Gunner on all. Preference for European at either Wusthof premium or Victorinox for value. Global are good knives too. The unpublished comment is probably genuine. It's just a little harsh on Global which are great for tasks that involve precision (ie. high level stuff). The German/European knives are workhorses.

  • I agree about ergonomics of Global knives which suit smaller hands. the weight balance is not that great either. I prefer the free knives I got from Coles TBH although not sure whether they would last 15 years like the global.

    They are very soft steel and can go blunt or get damaged easily. But you can also sharpen easily. Becareful that you don't get edges put on by knife experts at Mr Minit etc. They ruined the edge on my 15 year old Global knife.

    Just use a minosharp sharpener if you are a beginner.

  • We got the global knives as our wedding gift nearly 20 years ago and they are still extremely sharp

      Never sharpened? How much use?

      We've got a single Global knife maybe 10 years ago - and you can tell it gets less sharp after a while. We have basic pull through sharpener we use maybe once or twice a year and can definitely tell the difference afterwards.

        Agree. There is no way these knives after 20 years would not have needed to be sharpened unless they never took their wedding gift out of the box.

        I also have a set of Global and it's the same for me, they need to be sharpened at least once a year.

    Maybe it's just me, but a 20cm cook's knife is far too small (insert that's what she said joke here)

    • We have a different set of Global knives that also has the 13cm cooks knife and that is probably the knife that gets the most use out of the whole set. The 20cm one hardly gets used at all.

      20cm (8 inch) is the standard size for a cooks knife. I wouldn't recommend going higher unless you use a large chopping board and cook large meats (brisket, ribs) and don't want to invest in a separate brisket slicer.

      I have a set from nearly 10 years ago now but my 20cm is my go to knife for 85% of my knife work. Might use one of the smaller knives for other tasks or to avoid cross contamination if I've got a few things on the go but definitely the most heavily used of my knives.

  • Judging by the discussion, would it be fair to summarise this knife set as?
    - Not the best ergonomics compared to EU sets
    - Sharp for a long time
    - Reasonable price but not an absolute bargain

      Pretty much spot on. Although I'd contest the last part a little in that it's definitely a good price for the quality your getting. Especially looking at the crap some people buy. As someone mentioned above, they got a set 20 years ago as a wedding present and still going good.

        I saw the comment. There is no way that could be true that someone wouldn't need to sharpen these after 20 years. I barely cook and sharpen my Global's at least once a year and the difference is day and night.

  • Can confirm these are awesome. Had my set for aprox. 10 years.
    I think theyre regularly on sale for 200 or a little more.

    Have these knives. Great set and use them daily, retains their edge generally well. I would say if you’re using cheap knives this would be a good upgrade.
    Individuals with large hands might find the handle thin compared to other others.
    I’ve cut vegetables/meats for hours with these and haven’t had a problem.
