Roast Duck in 3 easy steps - If frozen, leave in bag and defrost fully in the refrigerator

  1. Prepare: Preheat over to 190°C. Drain any liquid from the cavity, dry the skin with paper towel and season with salt. Never stuff the cavity of a whole duck only use this space for inserting herbs. This allows the duck to ventilate whilst cooking.
  2. Roast: Place duck on a wire rack in a roasting dish and roast until golden and juices run clear. Approximate roasting time is 40 mins per kg at 190°C.
  3. Rest: Allow duck to rest in a warm place for 20 mins before portioning.

  • Is Cobram significantly better than regular old homebrand like, say, Aldi's Remano Extra Virgin Olive Oil?
    (I'm sure it's better, that's why I'm stressing the significantly)

    Because I don't think I'd EVER pay $18 (the RRP) for 750ml of olive oil.

      There are significantly better EVOOs than Cobram for the same price but you'll need to buy them in larger sizes

          Two of my Aus made favourites - if you're quick you might be able to get your hands on some 'Olio Nuovo' - first harvest of the season which usually sell out during the pre-order. Once you taste real EVOO it's hard going back.

          If you want the best olive oil, you'll need to get your hands on some Palestinian EVOO - nothing compares.

          • @Suspect420: Thanks for the advice. Always tricky to know what’s better if going purely based on advertising. According to google, Cobram Estate is the most awarded olive oil producer in Australia and were awarded one of the best in the recent world competition winning 3 golds and a silver.

            I think those world gold awards could be for their own limited premium “first harvest” oils and maybe not for the standard bottles you find in colesworths, but I didn’t research it too deeply so don’t take that as fact.

          • @Suspect420: Just wondering, do you taste the difference when using as cooking oil? I can definitely see the case for using it as seasoning and on salads etc.

            • @MountainSpring: There is not taste difference when its used in cooking.

              It takes your salads and sauces up about 10 levels.

              It is also fantastic as an elixir in the morning, it had helped regulate my stomach acids and has a host of benefits. Worth its weight in gold. EVOO also degrades when exposed to oxygen, light and age.

    My local Chinese BBQ shops selling roast ducks for $40 each, some asking for $42 so I am going to try to make my own.
