        So? I keep mine in the cupboard and it's completely fine. As did the restaurant I used to work in.

        By all means keep it in the fridge if you want to, but it's not crucial.

            @AustriaBargain: As I said, feel free to do so! I've just never liked the "appeal to authority" argument - it's demonstrably fine to keep it in the cupboard (hence why a large proportion of the population does so!).
