    • Glycerol 422 is a colorless, odorless, viscous liquid. For human consumption, it is classified as a sugar alcohol. It has three hydrophilic hydroxyl groups that are responsible for its solubility in water and its hygroscopic nature. Due to its hygroscopic properties, it helps to keep food moist and even extends shelf life of a product. It is also found in many lipids. It serves as a humectant, solvent and sweetener, and it may also help to preserve foods.

        It's likely that the ingredients come as a commercially prepared powder and the anti caking agent is included to stop it clumping, not for any benefit to the chicken.

        Salt firms the flesh making the breasts seem plump and satisfying to bite, sugar sweetens the flavour and promotes browning of the skin.

        Those salts raise the pH to assist water retention and they preserve the colour of the meat which will otherwise become pale and unattractive in that much liquid.

        The humectant 422 is glycerol. It's also a sweetener and it's hygroscopic, so it will assist with holding moisture… but it's just as likely that your chook was vaping, and possibly injecting some of those other ingredients to bulk up.
