      I think that other steel just stains "less", it is not stain proof so this sounds like an improvement

  • I have a number of these "classic" knives and the COTD set as well. I prefer the handles on the set listed here so they are my "go to" knives. The thing I do prefer with the COTD set is the scissors pull apart so they are easier to clean. I have had the "classic" cooks knife for at least 20 years and regular steel sharpening is the only "maintenance" it has had. Still going strong.

  • do these knives need professional sharpening or can you do it? i'm thinking the average person may not want to attempt it just based on how much they cost

    • You can get newby sharpeners which just use rollers you slide the knives on.

    These are my go to knives and i also paid $400+ for a set of globals. I prefer these $3 kiwi knives for cutting veggies or meat. You can shave with them. That's how sharp they are

    You just need to invest in a good ceramic knife sharpener to keep the edge

    • Kiwi knives are brilliant. So light and easy to work with, keep their sharpness, easily maintained with a steel before use and the occasional sharpen. Chinese stockists usually have a bucket of these lying around somewhere amongst the herbs and spices and dried fish!

    They are good knives, I have a set, had them for ages (I bought them in Germany).

    As others have said, and this goes for other knives anyway, have a good knife sharpener as well.

    Personally, I like the Cusineart KS-80.

    $400 is not much to pay. They will close to last you a life time.

    OH. And Full Tang means the blade runs from tip to end of handle
